🐠 Mediterranean Baked Fish 🍅🫒🌿
A healthy and flavorful Mediterranean baked fish with tomatoes, olives, and herbs.
White fish fillets: 4
Cherry tomatoes: 1 cup, halved
Olives: 1/2 cup, pitted and sliced
Red onion: 1/4 cup, sliced
Olive oil: 2 tbsp
Lemon juice: 2 tbsp
Fresh oregano: 1 tbsp, chopped
Fresh parsley: 2 tbsp, chopped
Salt: to taste
Pepper: to taste
Directions:
Preheat oven to 375°F (190°C).
Place fish in a baking dish, scatter tomatoes, olives, and red onion around.
Drizzle with olive oil and lemon juice, sprinkle with oregano, parsley, salt, and pepper.
Bake for 20-25 minutes, or until fish is cooked through.
Serve with a side of rice or salad.
