Ingredients

1 ¼ cup All-Purpose Flour
⅓ cup Maple Syrup
¼ cup Avocado Oil
½ cup Almond Milk
1 teaspoon Vanilla Extract
1 ¼ teaspoon Baking Powder
½ cup Fresh Blueberries

Instructions

Preheat the oven to 350°F (180°C). Grease a 8-hole donut pan with coconut oil. Set aside.
In a large mixing bowl, add all-purpose flour, blueberries, and baking powder. Stir.
Add maple syrup, oil, vanilla extract, and almond milk, and stir to form a smooth batter.
Use a spoon or piping bag to fill the donut pan. Fill each hole with the batter up to 3/4 of their level.
Bake the donuts at 350°F (180°C) for 12-14 minutes until they are golden brown and a pick inserted in the center comes out clean.
Set aside on a cooling rack at room temperature and wait until cold before glazing.

Glaze

When the donuts have reached room temperature, prepare the glazing.
In a small mixing bowl, combine icing sugar and almond milk and add a pinch of blue spirulina if you want to add a blue color to your donuts.
Dip the top of the donuts into the glazing and hold it for a few seconds above the bowl to let the excess glazing drip out.
Place the donuts back onto the cooling rack and repeat until all donuts are glazed.
Finally, pop the donuts in the fridge for 30 minutes to harden the glazing.

Guacamole was recently ranked as the 4th best sauce in the world, in my book, it’s a very close battle with hummus for that number one spot. Let me know which you would pick!

Ingredients:

✅3 large avocados
✅1 large handful fresh cilantro (about 1/3 cup finely chopped)
✅1/2 large red onion, finely diced (finely diced is key!)
✅1 jalapeno, finely diced (remove seeds if you dont want it spicy)
✅ 2 garlic cloves, minced (use fresh but jarred works, too)
✅1 lime
✅1/2 tsp cumin
✅2-3generous pinches salt

Here is how I made it:

1.I prefer cold avocados so store them in the fridge for at least 2 hours prior to starting.

2.Grab a board or a bowl - i did this right on the board. Finely chop 1 large handful fresh cilantro which yields about 1/3 cup.

3.To the cilantro, add 1/2 finely diced large red onion 1 finely diced jalapeño (remove the seeds if you dont like it spicy!), and 2 freshly minced garlic cloves.

4.Grab your 3 large avocados, remove the skin and pit and add to the rest.

5.Squeeze the juice of 1 small lime. If you want more lime-y you can add more lime after you taste it later.

6.Add 1/2 tsp cumin, a couple generous pinches of salt, then mash using a fork or utensil. I like my guac on the chunkier side so mash lightly, but mash longer or shorter depending on your preference.

7.Enjoy immediately, with your favorite vessel
