Our First for a real
Plantain Pastelle? Yes please!
Ingredients:
6 Plantains, just beginning to turn yellow
1/2 tsp salt
Filling of choice
Filling:
2lbs minced meat of choice/soya/vegetables
2-3 tbsp Irene's Pure Seasoning
3/4 tsp salt
1/2 tsp black pepper
3 tbsp roukou
2-3 tbsp oil
Filling Method: Mix minced meat/soya/vegetables with seasoning, salt and pepper
Heat oil, add mixture and roukou to hot oil and cook for 30 minutes. Allow to cool.
Plantain Preparation:
Peel plantains. Grate by hand or in food processor. Add salt
Place 1 tbsp mixture on greased leaf. Add 2 tbsp filling and top with another tbsp plantain mixture. Pat in place so filling is covered.
Fold leaves into package, tie. Boil or steam for 30 minutes
