笠谷的開頭是由一群爱吃的饕客在因緣際會之下共同組成，在2017.09和牛剛重新解禁登台之初因為種類眾多，導致市場上的價格非常混亂，消費者常常需要花費大量的金錢卻又不一定能夠買到相對品質的和牛。
笠谷從愛吃牛肉到慢慢開始起身投入研究牛肉這個區塊，到現在也因為眾多人的支持開始專營頂級冷藏肉品，就是因為站在消費者立場，所以我們堅持從源頭到消費者端進行嚴格的價格控管，讓消費者有更多物美價廉的選擇，而不再對於和牛就是天價的既定印象。
