豬頭飯的傳統做法是用在來米，但口感偏乾硬，現在人吃不慣，所以現在的店家多半會摻入蓬萊米製作。 豬頭高湯的材料包含一顆豬頭、豬骨、三層肉、骨仔肉和瘦肉，一起熬煮之下的動物油脂是香氣與美味的來源。
