【柚子文旦 Pomelo】
#好果物小常識

「老欉」不是文旦的品種，反而是將10年以上的柚樹定義為老欉。文旦老欉所結的果實總是特別小，但也特別鮮嫩多汁、細嫩甘甜！柚子樹大約花十多年根基才會穩定，所以一般說老欉文旦比較好吃是真的！

新鮮採收的文旦表皮光滑而且帶青綠色，此時並非美味高峰期。文旦最美好的風味在於「收水」(指果皮消水的過程) 後。經歷一周以上的「收水」後果皮會微縮，加上多餘水分蒸發後，果肉甜度增高而成就了文旦最佳賞味時刻。好品質的文旦可保存數十天也不影響其味道，轉黃也是一樣可口！

In Taiwan, a particular pomelo is called Wendan. People crave for the Wendan from the old pomelo trees (at least 10 years old) as they have thinner skin and sweeter pulps.

The freshly picked pomelo has to be developed and “dried out” for a week or more so as to enjoy a sweet and tasty pomelo. It can be stored in a cool, dry place for over a month or more!

【水蜜桃特別用法】
快來看看吧！水蜜桃除了直接食用，竟然還能這樣用！

🔸 水蜜桃砂糖
1. 將切除下來的水蜜桃皮放入烤箱中烤乾。
2. 把烤乾的水蜜桃皮磨碎，加入等量的糖並放入罐中，香甜美味的水蜜桃砂糖就完成了！

🔸 種水蜜桃盆栽
1. 保留水蜜桃的桃核，小心剪開並取出裡面的桃核仁。
2. 準備一個容器，讓桃核仁放在浸濕紙巾中，用透明塑膠袋蓋在上方等待發芽。
3. 桃核仁發芽後即可移入土中養護，之後就會長成一顆好看的小桃樹啦。

🔸 自釀水蜜桃酒
食材準備:水蜜桃 500g / 冰糖 200g / 白酒 900㏄
1. 輕輕揉洗水蜜桃表面以去除絨毛，再將桃子瀝乾去核切片。
2. 將水蜜桃、冰糖、白酒放入消毒乾淨的玻璃罐中密封。
3. 靜置陰涼處並且每天搖晃容器，使糖慢慢融化。
4. 約莫三個月就可以將酒過濾裝進新的瓶子，而後自釀水蜜桃酒就完成了。

🔸 Homemade Peach Wine
Ingredients: 500g peaches, 200g rock sugar, 900ml white wine
1. Gently rub the outer skin of the peaches in running water and drain. Remove the seeds and slice the peaches.
2. Put the peaches, rock sugar, and white wine into a cleaned and sterilized glass bottle to seal it.
3. Put the container under a cool dry place, and shake it daily and observe the sugars to be melted.
4. About three months, filter the wine into a new bottle. You can enjoy your homemade peach wine!
