蘆花雞是早期農村土雞種裡的首選，老一輩稱作鳳梨花，因飼養不易在90年代瀕臨絕種的危機，如今在宜蘭員山鄉經由一群專業人士復育成功並保種。
蘆花雞運動量大，肌肉發達，有土雞的Q彈而不帶韌，連雞胸肉均不會乾、澀、柴、實為優質土雞品種，是本餐廳才能品嚐的招牌料理！
