New pepper variety this year is a chocolate jalapeño/ Carolina Reaper cross and today was first bite into one.

Not knowing what it would be like we bit about half of it and I can say this is not jalapeño focused, super hot bite from the get go and builds nicely.

Was not expecting the Reaper as the main pepper, but super happy it is!!!

Hey Melrose Community Farmers Market stop by and test our new concept sauce and let us know what we should add/change what we are calling Dragon Slayer.

Tried to make it hotter than our Scorpion is King or our Komodo Kiss and think we need to kick up the three peppers maybe.

We also made a switch for the better on our GP7 to use Music garlic which will be our new norm.

Recipe for this evening meal. We switched out the peppers for this evening to be a little more family friendly, but certainly not tame.

From our garden we used one Ghost pepper, one Komodo Dragon pepper, and one Trinidad Moruga Scorpion pepper.

We used 2 TBSP of dark brown sugar.

Switched out their seasoning for one of our burger seasonings.

Here is the recipe as we got it from the site:

Reaper Ghost Cheese Burger
Don't fear the Reaper. Light it up with this classic hot chili pepper cheese burger by the BBQ Pit Boys. It comes with the South Carolina Reaper, known as the hottest pepper on the planet and the Ghost. These burgers are packed with flavor and topped with a Jack Cheese Sauce. Your family and friends will luv 'em.

For this Reaper Ghost Cheese Burger recipe use the following ingredients:

4 fresh ghost peppers
2 fresh Carolina Reapers
8 stalks of green onion,(scallion)
3 cloves of garlic
1 lb of 3/4 cooked bacon
2 lbs ground Sirloin steak
1 Tbsp of SPG Seasoning
4 tsp of brown sugar

Cheese Sauce

1 Cup Milk
4 Tbsp Flour
2 Cups Pepper Jack cheese.

Combine ingredients in a saucepan over a medium heat and stir continuously until smooth.

Method

1. Remove the seeds from the chilies, the heat is in the Capsaicin in the ribs pith, any heat in the seed is only from contacting the pith, so we just get rid of the seeds, it wont take away from the heat of the Capsaicin

2.Finely Chop the peppers and scallion

3.Finley chop the bacon, the fat from the bacon will go well with the ground sirloin which has a 90/10 fat ratio

4.Combine all the ingredients then add the brown sugar and the SPG seasoning and mix well.

5.Place the mix into the fridge for about an hour. Form the burger patties.

6.Place the burgers on the grill using indirect heat and cover, you may want to rotate them when you flip them over. cook to an internal temp of 160F/ 71C

7. Serve on a good burger bun with the cheese sauce and your favorite toppings
