One of the most beautiful things about this community is the incredible tapestry of wonderful people who have found their way here and made this place their home. For those of you who did not grow up in the South with collard greens as a staple of your table, we could not be more delighted to introduce you to something that we genuinely believe will become one of your most treasured culinary discoveries. ๐ŸŒฟโค๏ธ

Let's be clear โ€” collard greens are not just a green. They are ๐“๐‡๐„ ๐ ๐ซ๐ž๐ž๐ง. Bold, meaty, deeply satisfying, and so rich in flavor that generations of Southern families have made them the undisputed heart and soul of the kitchen table. There is a reason they have been a beloved Southern tradition for as long as anyone can remember. While we love kale and spinach and eat them daily, there truly is nothing like the collard!!โค๏ธ

๐Ÿณ AND THE RECIPE COULD NOT BE SIMPLER:
Heat your oil of choice โ€” olive oil, butter, or if you want to go full Southern, bacon grease ๐Ÿคค โ€” sautรฉ your collards for just 6 to 10 minutes, hit them with some salt and a bit of of apple cider vinegar to taste and that is IT. Unctuous, meaty, and so satisfying it is a meal unto itself โ€” yet goes perfectly with absolutely everything on the table.
Oh โ€” and cold out of the fridge the next day? Even better. ๐Ÿคฏ Trust us on that one.

๐Ÿ“– ๐Ž๐”๐‘ ๐…๐€๐•๐Ž๐‘๐ˆ๐“๐„ ๐๐„๐„๐“ ๐‘๐„๐‚๐ˆ๐๐„ ๐ˆ๐’ ๐๐Ž๐’๐“๐„๐ƒ ๐๐„๐‹๐Ž๐– โ€” tried, tested, and truly delicious!! ๐Ÿ‘‡๐Ÿ‘‡๐Ÿ‘‡

8 lbs. of beets - not trimmed (reduce recipe as needed)
- cover with boiling water and cook until desired tenderness (remember, if you are canning, they will cook more at that time)
- drain and trim beets by cutting off the top and bottom and roll beet in hand to easily remove the skin

In a large pot, add:
- 5 1/4 cups of Apple Cider Vinegar
- 3 3/4 cups of water
- 3 tsp. mustard seed
- 2 tsp. salt
- lots of sliced onions (we use lots because this is one of our favorite parts)
Optional Ingredients to add to pot:
- spicy chili flakes or fresh chili pieces
- garlic and/or any other veggies that sound good
- cinnamon, cloves and/or allspice
Bring to a boil and simmer 5 mins.
Pack hot beets into warm jars leaving 1/2" headspace if canning.
Ladle hot liquid onto beets and cap.
At this point, you can put into fridge and leave until your desired taste or process in a water bath canner (30 mins. pints/35 mins. quarts). Enjoy!!
