Your Easter breakfast or brunch is not complete without our kielbasa!!

Easter hours are as follows:
Monday, April 14th - 3:30 pm to 6:00pm
Tuesday through Friday, April 15th to the 18th - 11:00am to 6:00pm

Kielbasa Potato Soup

Ingredients
1 tablespoon olive oil
1 pound kielbasa cut into ½ inch pieces
2 garlic cloves minced
½ cup yellow onion finely diced
½ cup carrots peeled and finely diced – 2 large carrots
½ cup celery 2-3 stalks, finely sliced
4 cups chicken stock
1 ½ pounds potato cut into cubes
2 cups heavy cream or whole milk
2 cups shredded cheddar cheese
½ cup shredded parmesan cheese
½ tsp kosher salt
¼ tsp black pepper
¼ cup chopped parsley
US Customary – Metric
Instructions
Add olive oil to a Dutch oven or soup pot and heat over medium-high heat. Add the sausage and cook for 5-6 minutes, stirring frequently. Remove the sausage using a slotted spoon.
Add garlic, onions, carrots, and celery and sauté for 2 minutes.
Add the chicken stock and potatoes. Bring to boil and then reduce heat. Cover and cook for 15 minutes, or until the potatoes are tender.
Add the cooked sausage, milk, cheddar cheese, parmesan cheese, salt, and pepper. Stir and cook on low heat 5-10 minutes longer, until the cheese has melted.
Stir in parsley before serving.

Creamy Kielbasa and Potato Soup
Servings: 4

Ingredients
• 4 potatoes, cubed
• 1 onion, chopped
• 1 stalk celery, cut into 1/2 inch pieces
• 1 (14 ounce) can beef broth
• 1 (14.5 ounce) can chicken broth
• 1 cup water
• 1 pound kielbasa sausage, cooked and sliced into 1/2 inch pieces
• 1 (10.75 ounce) can condensed cream of chicken soup
• ground black pepper to taste

Directions
1. In a large pot over medium heat, combine potatoes, onion, celery, beef broth, chicken broth, and water. Bring to a boil, then reduce heat and simmer until potatoes are tender, 15 minutes. Stir in sausage and condensed soup and continue to simmer until heated though and slightly thickened. Season with pepper. Serve hot.

Cheesy Ranch Potatoes and Sausage

Ingredients:
4 large potatoes, cubed
1 lb sausage, cooked and sliced
1 cup shredded cheddar cheese
1/2 cup ranch dressing
1 onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced
1 tsp paprika
Salt and pepper to taste
2 tbsp olive oil

Directions:
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the cubed potatoes, sliced sausage, chopped onion, bell pepper, minced garlic, paprika, salt, and pepper.
Drizzle with olive oil and ranch dressing, then toss to coat everything evenly.
Transfer the mixture to a baking dish and spread it out evenly.
Bake in the preheated oven for 25-30 minutes or until the potatoes are tender.
Sprinkle shredded cheddar cheese over the top and return to the oven. Bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
Prep Time: 15 minutes | Cooking Time: 35-40 minutes | Total Time: 50-55 minutes

Chorizo-Stuffed Sweet Potatoes

Ingredients
4 medium sweet potatoes
1/4 cup plus 1 tablespoon extra-virgin olive oil
1 tablespoon pickling spice
1 cup plain fat-free Greek yogurt
1 clove garlic, minced
Kosher salt and freshly ground pepper
1/4 cup golden raisins
8 ounces fresh chorizo
2 tablespoons pine nuts
Chopped fresh mint, for topping

Directions
1. Preheat the oven to 450 degrees F. Pierce the sweet potatoes all over with a fork and microwave on a microwave-safe plate until tender, 20 to 25 minutes.
2. Meanwhile, heat 2 tablespoons olive oil in a small skillet over medium-high heat. Add the pickling spice and cook, stirring, until toasted, about 1 minute. Transfer the spiced oil to a mini food processor and pulse until the pickling spice is finely ground, about 1 minute. Transfer the spiced oil to a medium bowl and stir in the yogurt, garlic, 1 teaspoon salt and a few grinds of pepper; set aside.
3. Soak the raisins in 1/2 cup warm water in a small bowl, 10 minutes. Meanwhile, heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the chorizo and cook, stirring and breaking up the meat with a wooden spoon, until browned and crisp, 5 to 6 minutes. Stir in the pine nuts and cook, stirring, until lightly toasted, about 30 seconds. Transfer the chorizo mixture to a bowl. Drain the raisins and stir into the chorizo mixture.
4. Arrange the sweet potatoes on a foil-lined baking sheet. Drizzle with the remaining 1 tablespoon olive oil and season with salt and pepper; rub to coat evenly. Roast until the potato skins are crisp, about 10 minutes. Split open the sweet potatoes and fluff the flesh with a fork; season with salt and pepper. Top with the chorizo, yogurt sauce and mint.
