For anyone intetested we have.
Eating tomatoes $1.50 lb
Canning tomatoes $18. Per half bushel
Carrots $2 a bunch
Radishes $1 a bunch
Winter squash ( acorn, spagetti, buttercup, etc.) $2 each.
Beets $2 a bunch.
Pickling cucumbers $8 a bucket( about 6 pounds) or 4 for $1.
And much more. We will deliver in Amalga.

Thai basil chicken and vegetables

2 lb diced chicken
2 medium zucchini, diced
½ cup carrots, diced
2 cups sliced mushrooms
½ cup chopped fresh basil (Italian basil will work if you can’t find Thai basil)
¼ cup chopped cilantro
2 Tbsp soy sauce
2 Tbsp fish sauce
Juice of ½ fresh lime
½ Tbsp minced ginger
½ Tbsp minced garlic
2 tsp sugar
½-2 Tbsp sambal oelek chili paste
2 tbsp oil

In a small bowl, combine the fish sauce, soy sauce, lime juice, ginger, garlic, sugar, and sambal oelek for the sauce. set aside.
If you like a thicker sauce, add 1 tbsp cornstarch to your sauce tp help thicken.
Heat oil in wok or large skillet over medium-high heat. Brown chicken then
add zucchini, mushrooms, and carrots to pan; stir-fry for 3 minutes.
Add sauce in bowl to pan; stir to mix well, and continue cooking for 5 minutes, until vegetables are crisp-tender.
Stir in herbs and serve with jasmine rice.

Summer is here. We wanted to share our favorite drink to help refresh and cool of on those hot summer days.

Strawberry mango limeade

2 Cups water
¼ Cup sugar
2 large limes
4 strawberries
¼ mango
2 mint leaves (optional)
Ice

Crush strawberries and mango together. Juice limes. Combine all ingredients together and mix well. Server with ice.

Asiago basil bread

2 ½ C. warm water 2 tsp salt
2 pkgs. Dry yeast 6 C. flour
3 T. sugar ½ C. oil
2 C. Asiago cheese ¼ fresh chopped basil

Dissolve yeast in warm water and sugar. Place 3 cups of flour and salt in large mixing bowl. Add yeast mixture and oil, beat well. Gradually add remaining flour, mixing after each addition. Knead for 10 minutes, out into greased bowl and beat down every 10 minutes for 1 hour. Divide into 2 loaves, place on baking sheet, and bake at 400 degrees for 30-35 minutes.
We love to use balsamic vinegar for a dipping sauce.

Bacon Wrapped Asparagus
1 lb asparagus
8 bacon strips
Sesame seeds

SAUCE
1/2 c. Brown sugar
1/4 tsp garlic
1/4 tsp pepper
1/2 c. Butter
2 tbsp honey
1/2 tsp salt

Wash and cut the asparagus in half. Heat oven to 400 F. Wrap a bundle of 5-6 asparagus spears with a strip of bacon. Mix melted butter, brown sugar, honey, pepper, garlic and salt. Pour over the bundles and bake for 15-20 minutes or until bacon is cooked

We are one week from opening the Cache Valley Gardeners market at the historic courthouse in Logan. Next week we will have asparagus, beets, radishes, garlic scapes and some fresh greens. For you home gardeners, we will be bringing asparagus roots to sale. The market will be opening May 9th from 9-1 pm. If you come we encourage you to wear a mask and follow social distancing while at the market. We look forward to seeing you there.

Even with the current pandemic we are still growing fresh local produce and will start having produce the last part of April. At the present time we will be doing pickups at the farms.

We will also be offering CSA shares again this year. We anticipate that our 2020 share will last 25 weeks. That is six months of quality fresh produce per share.
