This week why not sauce seared chicken and veggies up with our Vegetable Kingdom Herb Roasted Garlic Potato Chowder.
The recipe is super simple.
🍗 Use salt and pepper to season; then sear local Chicken drumsticks till brown in a saute pan with a bit of oil.
🍗 Top the chicken with a couple of cups of chopped fresh mushrooms ( these are locally raised trumpets and shiitakes) and 2 diced leeks. Season to taste with a shake or two or Worchstershire sauce.
🍗 Continue to saute till veggies start to brown.
🍗Top with a couple of bay leaves, fresh rosemary and fresh thyme.
🍗 Add a jar of our Gralic Potato Chowder and a jar’s worth of water. Add 1-2 Tbsp. of tomato paste to the pan and blend well. Lower heat to medium low and allow the chicken to cook in the pan juices.
🍗 When the chicken is tender, serve it with the veggies and sauce over noodles or rice and enjoy!

Spice things up this weekend with a jar of our Halfway To Homemade Louisiana Style Creole Etouffee and this easy recipe for Stuffed Poblano Peppers! Wow!
⭐️ First, grill the whole poblanos on both sides until they develope a bit of a char
⭐️ Slice and griill a couple of peeled , sliced tomatillos, a jalapeno, and some sliced zucchini or Mexican squash, until they develop grill marks on both sides- flip halway during the cooking process.
⭐️ Cook your favorite noodles according to package directions. Rinse and reserve.
⭐️ Chop the grilled tomatillos, jalapeno and zucchini and place in a saute pan with the cooked noodles ( or you may substitute rice or quinoa here)
⭐️ Add a jar of our Vegetable Kingdom Creole Etouffee to the pan. Toss everything to combine and allow to simmer till the sauce thickens. season with sime fresh minced cilantro. Adjust flavors to taste with a bit of salt and pepper as you would like.
⭐️ Meanwhile, cut the tops off of the charred and cooled poblanos and carefully remove the seeds. - No need to peel the skin!
⭐️ Stuff the hollowed out poblanos with the creole mixture
⭐️ Arrange the stuffed poblanos in an oven-to-table baking dish. Top with a bit of grated cheese.
*** EVERYTHING UP TO THIS POINT MAY BE DONE AHEAD OF TIME***HOLD THE CASSEROLE IN THE FRIDGE***
⭐️ About an hour before you are ready to serve. Pull the casserole fush out ofvtge fridge and bring to room temp. Bake in a preheated 375 degree oven for 30-40 mins , till the cheese is melted and poblanos and filling are hot.
⭐️ Serve with sliced avocados and a wedge of lime on the side

We love this quick and simple recipe from Yonder in Franklin NC!

When I’m cold, I want curry. Have y’all tried our already made Massmam Curry from yet? This is a simple meal that can be made in minutes - just add , meat (if you prefer) and pair with a nice organic jasmine rice 🍚 Top with local spring garlic + watermelon radish 😋

What’s cookin?
Did you know that you cAn substitute a jar of our delicious Halfway To Homemade Louisiana Style Creole Etouffe in any recipe that calls for a can of tomatoes?

We used it here as a base for our favorite arrabbiata sauce made, in this case, with Beyond Meat plant-based Italian sausage and served over a couple of packages of Miracle Noodles for a Delicious and Vegan entree everyone will love!

Not Vegan or Vegetarian? No worries. Use your favorite noodles and shop local at an area farmers market for hot breakfast sausage or brats. Grill the sausages first and then add to the sauce. Enjoy!

We are celebrating National Cook with Sweet Potatoes day with our versatile Carolina Style Sweet Potato Bisque ( Made with North Carolina sweet potatoes and available to order online at VegetableKingdom.com) and this delicious recipe for Sweet Potato Banana Muffins.

Vegetable Kingdom's Sweet Potato Banana Muffins

4 tablespoons unsalted butter ( or vegan substitute), melted
1/3 cup honey
1 cup mashed ripe banana
½ cup Vegetable Kingdom Sweet Potato Bisque
¼ cup milk
1 tsp. vanilla
2 eggs
1 Tbsp. cinnamon
1 tsp. baking soda
1 tsp, baking powder
½ tsp salt
1 3/4 cups flour

Line a muffin tin with paper liners.
Combine melted butter, honey, mashed banana, Vegetable Kingdom Sweet Potato Bisque and vanilla in a bowl. Beat in the eggs. Combine dry ingredients and blend into the wet until just combined.
Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
Sprinkle tops of muffins with additional cinnamon.
Bake standard sized muffins for 15-17 minutes. To test for doneness, a wooden toothpick inserted into the center of a muffin should come out clean.
Allow muffins cool in the pan for 5 minutes and then remove to a wire rack. Serve warm or at room temperature.
