This classic buttery-cheesy scone recipe was generously shared by Katrina Heche, the voice behind in Stoughton, Wisconsin - and they are absolutely perfect!

Made with our Silky Smooth Pastry Flour, these scones have that irresistibly tender, flaky crumb that only a good pastry flour can deliver. Sharp cheddar, fresh chives, a hint of garlic, cold butter, and chilled heavy cream - simple ingredients that come together into something seriously impressive.

One tip we love from the recipe: refrigerate your scones for 30 minutes before baking. It keeps the butter cold, reduces spreading, and gives you those beautiful defined edges that make a scone look as good as it tastes. 🙌

Yes! Our Frederick White Wheat is a 100% extraction flour, meaning the entire grain is present— bran, germ, and endosperm — just as it was in the whole kernels before stone-milling. So it’s an excellent whole wheat flour choice, especially for cakes, cookies, biscuits, and quick breads where you want whole grain nutrition with a milder, more neutral flavor than you get with red wheat varieties.

That said, if you’re baking bread and need a higher protein level for proper gluten development and rise, Frederick White Wheat on its own may not get you there. Here are a couple of options 👇

🌾 Blend it with our High-Protein Flour or Sifted Artisan Flour for a great balance of whole grain goodness and bread-baking strength

🌾 Or reach for one of our higher-protein 100% extraction flours like Red Fife, Durum, or Whole-Kernel Bread Flour for a fully whole grain loaf with the protein level that bread needs

Farmer Harold was out in the field checking the pollination of our Turkey Red Wheat on May 19! 🌾

This is one of the most fleeting yet important moments of the entire growing season. That’s because the few days when the wheat is flowering, pollinating, and setting grain determines the quality and quantity of the harvest — impacting what eventually makes it into your bag of freshly stone-milled flour.

Harold knows this field like the back of his hand, and watching him walk through it during pollination is a reminder of just how deeply this work is rooted in care and knowledge built over many decades!

Turkey Red is one of our most beloved heirloom varieties - brought to the Great Plains by Mennonite immigrants from Crimea and Ukraine in 1873, prized for centuries for its hardiness and exceptional baking qualities, and recognized by Slow Food on their Ark of Taste. It has deeper, more complex flavor than common hard red winter wheats and produces beautifully moist and cohesive loaves.

Ever wonder what that lot number on your bag of Janie’s Mill flour is all about? Jill breaks it down for you today! 🌾

Our lot numbers are all about transparency and traceability — things we take very seriously! When you open a bag of Turkey Red, High-Protein, or any other Janie’s Mill product, the lot number links it back through our entire system all the way to the field it was grown in. Traceability is also important for the integrity of our certified organic farm and mill, and for food safety.

Here’s how it works: When grain comes into Janie’s Mill, it comes with a farm lot number that tells us exactly which field it was grown on, the type of grain, when it was harvested, and the bin it was stored in. Then we add our own milling lot number to that, so that the number on each bag gives the full history of your flour all the way back to its source.

For us, this isn’t just about compliance. It’s about accountability and the kind of transparency we believe every baker deserves. You should always know exactly where your food comes from, and we’re proud to make that possible. 🙌
