A full shift filming at Mediterranean Foods means a lot of work goes into every video, with plenty of laughs and unexpected moments along the way.

Flying cheese, cracking up between takes, Tommy making faces behind my back, walking off, and somehow ending the day saying goodbye to the cheeses like they’re part of the crew. This is the part you usually don’t get to see.

A big thank you to Tommy and the entire Mediterranean Foods team for the time, patience, and teamwork that goes into every filming day, and to all the customers for being so patient while we take over the aisles for a little while.

A lot of work, a lot of laughs, and a very real look at what happens off camera.

Grilled halloumi and watermelon is a simple summer combination with the perfect balance of sweet and salty.

In collaboration with Christina Dynamite, we’re sharing an easy way to serve halloumi with cold watermelon, pomegranate syrup, toasted sesame seeds, flaky sea salt, fresh mint and basil.

Start by slicing the halloumi and patting it very dry with paper towels. Heat a cast iron skillet over medium heat, add a little olive oil, then cook the halloumi for a few minutes on each side until golden.

Serve the warm halloumi with the cold watermelon, drizzle with pomegranate syrup, then finish with toasted sesame seeds, flaky sea salt, mint and basil.

Fanouropita is a beautiful Greek Orthodox tradition made in honor of Agios Fanourios, whose feast day is August 27. Traditionally, we ask for his intercession when something is lost or when we are searching for something to be revealed.

FANOUROPITA RECIPE

150 g raisins
30 g cognac
350 mL orange juice
280 g sugar
180 g oil, half olive oil and half avocado oil
1/2 tsp cinnamon
1 level tsp baking soda
Pinch of salt
600 g self rising flour
Powdered sugar for finishing

Preheat oven to 350°F.

Soak the raisins in the cognac and set aside.

Whisk together the orange juice, sugar, oil, cinnamon, baking soda and salt. Gradually add the self rising flour and mix just until combined. Fold in the raisins and cognac.

Pour into a parchment lined baking dish and bake for about 40 minutes. Let cool completely and finish with powdered sugar.
