Brought to you by The Broke Socialite, Shameeka Ayers, Miss Pinkie's Seafood Mac & Cheese is a decadent and specialty frozen entree that features fresh seafood, artisanal cheeses and bit of Southern love. After being deposited at their home for summer holiday breaks, Grandaddy would fish the banks of Lake Jackson in Covington, GA for crappy and brim most each morning. He'd bring his bounty back to

their home in the Nelson Heights community, clean the fish and Grandma would have the skillet ready to fry up a mess of them for fish and grits + biscuits or hoecakes. It has only been recently that I realized that they likely fished because it was expensive to feed my sister, cousins and me for a few weeks; so they did what was most budget-friendly! For this reason, I pay further homage to the chef, Grandma Pinkie. She could feed 6 people with 4 hand-sized pieces of crappy. When we'd go on vacations (OK...one vacation to visit Uncle Willie in Jacksonville, FL), she'd make us try shellfish like shrimp and scallops. I was sold at the first bite.
