Our milk comes from grass-fed, free-roaming cows in Schulenburg, Texas. These Jersey cows are the pride and joy of Bob and Darlene Stryk, second generation Texan dairy farmers. They are as proud of their milk as I am of the cheese I make with it. Currently we are offering this cheese in Austin only - Saturdays at SFC Farmers' Market at 3200 Jones Rd.

What happens when you let a raw milk cheese sleep for 8 years in a living cave?

Everything depends on two things:
🔸 The size of the wheel
🔸 The freedom you give it
Large-format cheeses — 10 to 25 inches wide, 4 to 8 inches thick — evolve differently.
The thicker the wheel, the deeper and slower the transformation.
But even more important is how much freedom you allow that cheese to have.
In a living cave, freedom means no additives. No shortcuts.
It means trusting the environment — temperature, moisture, light… and even sound.

It means letting the rind emerge without control, watching as microbial life writes its own language across the surface.
