Mister Burns

Mister Burns For about 4 years I had gardens there learning the do's and don'ts of basic veggie gardening. So now why Mister Burns?

Mister Burns is Peppertorium, Craft Sauce, and Novelty Nosh market vendor and farm located in North Baileys Harbor Door County Wisconsin locally Burnsin’ NEW and Beyond! The story of Mister Burns... Since I was a kid I always enjoyed walking out to
veggie gardens snacking on the fresh pickings while filling a ice cream pail with the goods. Cooking also has always been a huge part of my life since

a kid with family and professionally as well so around 2009 I started my first veggie garden out back of Highland Howie's. Also since a kid I was always had a taste for spice, so it was in these first few years with a garden I really dove into growing whatever varieties of hot peppers I could find at the local nurseries. Fast forward a few years and a few gardens later, 2016 is when I got into the Superhots and it's just grown literally since. Well let's just say I have a reputation... One night working with a cook friend, I burnt something per my usual and he coined the name. Never being one to shy away from my shortcomings I kept the name going on now as my hot sauce and salsa business. Last year my pepper plans got put on the back burner as we had an unfortunate accident with our couple month old pup, so I had to sell the majority of my harvest just not having the time to process all of it. That was my first year fermenting, and I ended up making a 9 gallon batch of hot sauce. That's what really sparked my vision and goals for this year. February 14th was when most of the superhot seeds hit the soil and is really the conception of Mister Burns. A season long time-lapse and making 20 gallons of sauce were the initial goals and I went from there. Mister Burns really was a personal project pushing myself at all my hobbies... Gardening, videography/ photography, cooking, and music and combine them into a purposeful goal of growing/ producing Peppers, Salsa, Hot sauce, and everything spicy! Thanks to all here that have liked and followed Mister Burns!

Anyone looking to get saucy this summer? I have a 🌶️ proposal for anyone interested in vending as Mister Burns at markets and events this summer. Although I’ll lighten the load out, it does require a larger vehicle and some heavy lifting to get there and setup. Message for more details.

Big thanks to Annie for letting me grow on her beautiful land, all the help with the tillage and the logistics that go into a grow this size. A few weeks back I was asked to do a segment for fm 106.9 the Lodge's Cork & Fork series. It was a 2 part segment that will air throughout the year talking about the origin and also the growing and making of the sauce. Here's the seed to jar segment over a quick little Timelapse of this years grow and other sauciness! It's been quite the ride the last few years and I'm super grateful to all you wonderful 🌶 peeps for being part of it!

Annie was busy on the Skid steer tilling up more garden beds, and I was busy raking, amending, and planting till the sun went down Sunday night! We got a bit more 🐫 poo, more coffee grounds, and compost to spread for the remaining rows. The last of the plants got the boot from the greenhouse this am and with a lil luck will be all planted up by the end of the day! It was great to see Backyard Acres & Bite The Farm as they came out to close out our open farm! Miranda has been a big inspiration since I got my start, seeing her go from being an organic farmer with a food stand, to getting her own big shiny food truck and operating a brick and mortar restaurant in Luxemburg!

Here’s a sneak peak behind the making of this years Ramp salt! It all starts with the Ramps foraged here on the property of Gustave's Getaway, then they are washed and blended, mixed with salt, and ready for the freeze dryer! We sustainably harvested 50+ lbs of ramps to mix and dry with about 100lbs of salt! You could just dry the ramps and mix in salt after, although I find adding a bit of water and mixing the salt in prior to drying really ramps that flavor up all the way through. I’ll mix in the 🌶️ powder after the drying to create the 4+ unique varieties. Regular, Hatch chile, scotch bonnet, and ghost were what we did last year, and I’ve got a few more up my 🌶️ sleeve for this year! We got a new toy to help with the blending of the ramps and the final product, a Robo Coupe 4 quart food processor. Thanks to Annie of Door County Kraut Co. for the help in foraging, processing, and access to her family’s historic 150+ year farmstead to craft these amazing salts! Stay salty my 🌶️ peeps!

Whether it’s their first Flavor tour of Burns or they are coming back for a 🌶️ re-up, I always enjoy the 🌶️ convo that is had here at the table of Burns! Last weekend a customer from the Baileys Harbor Farmers Market came out for the open farm experience and said something so simple yet meant so much. “I only deal in good news” he said. That phrase really embodies what I’ve been striving for the last few years here at Mister Burns. I’m a big believer in that you change the world through a shift in your perception whether that’s through dab of 🌶️ or simply saying something nice. Stay nice and 🌶️ all!

It was FDA inspection day here at the Peppertorium! After breaking out the logs, demonstrating my processes, and going over all the other rules and regulations that go into being a producer, everything checked out! Thanks to Annie of Door County Kraut Co. for the mentorship to build and get my dream kitchen licensed last summer and the guidance through everything that goes into being legit. Athough inspections can be a bit nerve racking, it’s always nice at the end to make sure everything is being done to proper food code. Just as the inspector left my vendor pal Crafts by Kim Green Bay came to see the farm with a friend and bestowed upon me the greatest 🌶️ earrings! 🌶️ Earnings are now back in stock to 🌶️ up those lobes! $10/ pair. Happy Tuesday, keep it 🌶️ all!
