Hello everyone. It sure has been a while. We've been busy with homeschooling our 6 children and homesteading, along with the everyday life of going to work outside the home. We just needed a bit of a break from the Wild Olive Acre business, but we're finally rested from the "burnout" and are ready to start again! We hope and pray everyone had a wonderful holiday season and have started your new year with a positive and productive attitude, ready to begin your new year with a new skill!

Our family has a big goal: In the Spring of 2027, we are relocating our homestead to a permanent site in Southwest Missouri. We are dedicated to building a new foundation for our family in the Ozarks, and we are running a special series of classes this season to help fund the move.
We are opening 5 Exclusive Poultry Harvest Masterclasses for the 2026 season.

This is a 5-hour, comprehensive, hands-on immersion in our open-air processing area. We are moving beyond theory to give you the actual skills of a resilient food system. We will cover the full cycle of the Cornish Cross meat bird:

Husbandry: Proper care, feeding, and management for high-quality meat.

Harvest: Professional, humane dispatch and open-air processing.

Post-Harvest: Evisceration, sanitation, and long-term storage.

After a careful demonstration and under direct supervision, each student will personally harvest two broilers—including dispatch, scald, pluck, and evisceration. We will use professional shrink-bags for packaging that stores beautifully in your freezer.

So why Join Us? Whether you want to take this class for skill-building, just for experience to see if you really want to pursue a life of making your own food or if you just need a refresher, this class is for you.

We have 5 dates planned for this year: 3 in the spring and 2 in the fall. Each class will have 10 spots available.
Location: Our Homestead (Open-Air Processing Area)
Take Home: You will take home the 2 fresh broilers you harvested during the class!

We harvested some turkeys yesterday and found this...I cleaned out the gizzard and after i tossed the inner lining that holds the rocks and things to grind the food, I found this! A nail stuck in its gizzard! I had to investigate further so I pulled the nail out, and cut the gizzard open where the nail had been lodged and found more rocks, feed, and some other stuff I couldn't identify all inside the gizzard but outside that sack that holds this kind of stuff. Crazy! This is a new one for us! Turkey was acting fine and healthy too.

We harvested rabbits this week! Out of 13 rabbits, we got 11lbs of ground for some bunny burgers, tacos, and maybe chili 🤷🏽‍♀️ and 7lbs in roasts! Rabbit is fairly easy to harvest and the meat is light in flavor. Bacon is rabbit meats best friend 😋

Bunny burgers are first on the menu for tomorrow's lunch 🤤

My boys and I doing some of the morning chores! Luke stole a sip of my coffee while I pushed the wheelbarrow... stinker 😄 and Nate insisted on sitting in the wheelbarrow so he could hold the bucket of grass.
We're bringing in the fresh goat milk, and taking the meat chickens their crumble and the bunnies and guinea pigs some yummy wheat grass we've grown for them with some alfalfa hay.
These guys are such good helpers! On their way to being some awesome Farmer Boys ❤️ I'm a proud Mamma!

We still have openings!

This is a skill we've developed over the last 8 or so years since we first started raising and harvesting our own livestock for our family. We had a pretty rough start, with only YouTube and stories of Grandmas making Sunday chicken to show and tell us how to harvest yard birds. After a lot of mess ups, fails, and then finally successes, we became confident enough to show others with hands-on participation how to harvest a Cornish Cross Broiler chicken. We feel its a calling to provide this service to others, so they don't have to go through the process alone or make the same mistakes that we've made in the past.
If you're curious about raising and harvesting chicken for you and your family, I encourage you to register! We've had folks take our class just to see if they're really able to do what needs to be done when harvesting you own livestock. Some are empowered with the knowledge, and go home with confidence, ready to harvest their own chicken. Others have found that it isn't something they can or want to do after all, but they were still glad they came to find this out.
We're excited to meet folks eager to learn a new skill in providing for themselves and family.
