Hi Hudson Valley friends — long time! 👋

Many of you knew me from Beacon Pantry — the cheese shop, the restaurant, the catering. Those were some of the best years of my life and I think about that community often.

I’ve been in NYC (and Italy!) since then working in financial services — and I’ve just launched something I’m genuinely excited about.

It’s called The Yellow Legal Pad. Financial coaching for people going through big life transitions — approaching retirement, starting over, navigating a change, or simply wanting to finally get clear on their finances.

In practice that means sitting down together and looking at your real picture — your income, spending, debts and savings — and leaving with a clear snapshot and three specific things to do. No jargon. No judgment. Just clarity.

Today marks 10 years since the opening of Beacon Pantry. March 1, 2014 we opened our doors for the first time. I had never run a retail business before, nor had I ever worked in a cheese shop (or grocery store for that matter). I was terrified!! It was so busy that first weekend.

For every person who walked through the door of that little shop and continued to for 10 years, I thank you. There are so many of you who are “day one” customers and who still shop at the Pantry today. And to those we collected along the way, you have been so important to the success and inspiration of Beacon Pantry.

Over the past weeks I’ve received many many messages on social media and email; little notes of thanks and trips down memory lane. Those personal communications have been so appreciated and meaningful.

I would be remiss if I didn’t highlight the amazing staff I’ve had over the years. From day one until now I have been blessed with having some amazing people by my side. Jen, Beth, Stacie, Sherie, Mark, Davide, Clara, Lew, Robin, Nikki, Mary…..to name a few.

If you’re in Beacon this weekend please stop by, pick up a favorite items (and a baguette) and say hello. I’ll be there all weekend. And please join me in giving a heartfelt welcome to our successor, Beacon Cheese Shop. They’re going to be great!!

‼️We are in our final days of Beacon Pantry. Since our successors are going to make some renovations to the space and rearrange things a bit, we need to reduce our inventory!

🍝 Starting today all shelf stable items (pasta, olive oil, condiments, crackers, spices) are 30% off. Basically the entire store except baked goods and perishable items are on sale. 🧀Parmigiano Reggiano - The King 👑 of Cheese. The top-selling cheese in the shop from day one, and the second best-selling item in the shop behind those infamous baguettes. Our day-to-day Parmigiano is the 24-month version. To be called Parmigiano Reggiano it must be aged at least 12 months and go through a rigorous process. How it is made, how it is salted, how long it ages, and the diet that the cows eat all factor into making this incredible cheese. And of course, it must be made in the Parma region of Italy 🇮🇹

If we can instill a few last things in your “cheese education”, please remember: Parmigiano Reggiano can only be labeled as such if it meets rigorous requirements. Pre-grated Parmigiano may be convenient but is no substitute for freshly grated. Don’t throw out those rinds!! They are entirely natural (just dried cheese) and add immense savory flavor to soups, stews and sauces. Just keep a collection of them in your freezer and throw in a rind or two when cooking!! 🥘

🐄 Parmigiano is a great snacking cheese. Don’t just relegate it to the pasta bowl. Put some on your next cheese plate Pecorino Romano and Parmigiano are not nearly the same and are not interchangeable, though they are both often grated. 🐑Pecorino Romano is delicious in its own right, but saltier and made from a different animal altogether and with a totally different flavor!

🫒Don Luigi Sicilian unfiltered olive oil has been a staple product since day one. In fact, we chose our vendor, Teitel Brothers of Arthur Avenue in the Bronx, because we wanted to carry this delicious olive oil. Flavorful enough for dipping but not quite so precious that you can’t glug it generously when cooking or dressing salads. It’s an all-around perfect oil, and you apparently agree because it’s been in the top 10 best-selling products in the shop since the beginning.

We’ve told the new owners that there may be a stampede if they don’t carry this gem, and we think they understand. But just in case, we are stocking up this month so you can pick up a spare bottle (or two) to tide you over 🕊️ 😉

🥖Oh, the baguette! Thousands and thousands of baguettes are sold each year. They are the single best-selling item at Beacon Pantry, year in, and year out. A baguette frenzy every holiday season. The worried glances at the basket that holds them when entering the store. Is someone else going to take the last one? We know you 🧡 them and the new folks know that too. Rest assured they will carry the same delicious baguette 🥰

There will be some downtime between our closing and their opening. If you have room in your freezer, stock up to hold you over! Then you can pop one in your oven and have warm bread while you wait for the opening of our successor 😌

On March 1, 2024, we will celebrate the 10-year anniversary of the opening of Beacon Pantry and reminisce about our humble beginnings at 267 Main Street. Since then, our journey has been marked by growth and evolution—relocating, establishing a café, expanding the market, offering classes, catering, private dinners, and more. Throughout it all, our unwavering mission has been to provide exceptional food to Beacon and beyond, infused with a touch of Europe and a generous dose of cheese education.

As seasons change, so do endeavors. On March 3rd, Beacon Pantry will be closing our doors for the last time. In the subsequent weeks, a new cheese and fine food store will emerge in our current space. While retaining many of the beloved products from Beacon Pantry, they will introduce their own exciting twists, promising a wonderful experience for Beacon. Familiar faces will still grace the new shop, ensuring continuity.

Owning and operating a small business in Beacon has been a profound privilege, rivaling only the joy of being a mother to my incredible son, Mola, whom many of you also know. Expressing my gratitude for our customers and their steadfast support over the years is beyond words and concluding this chapter on my own terms brings me a profound sense of fulfillment. I have determined that now is the perfect moment tohand over the keys to the best folks I know for the job.

In the upcoming weeks, we’ll stroll down memory lane, and spotlight some of the cherished products that have adorned Beacon Pantry’s shelves.

🤗 Let’s welcome back...The Screamer from Ueli Moser. A staff fave, this is a classic triple crème🐄 cow’s milk cheese with at least 75% butterfat, one of the very few of this style made in Switzerland 🇨🇭. Think butter, but better. Pair it with sparkling wine to cut the richness or a buttery Chardonnay to complement this beaut!🍷🧀
