Tired of rolling your own noodles for ka pia? Try this easy recipe using udon noodles from Lucky Oriental Market to cut your cooking time in half!

Ingredients:
1 pack of chicken thighs (approx. 2-4 lbs)
6 packs of udon noodles
1 pack of tapoica starch
1 can of quail eggs
cilantro
green onion
Chili oil paste
Green Mountain Seasoning Sauce
Fried onion or garlic (optional)

Step 1: Boil the chicken thighs in a 20 qt pot until the chicken is cooked (approximately 45mins-1 hour). Once the chicken is cooked, take out the chicken and shred the meat. Save the broth for the noodle soup base.

Step 2: Boil water and pour the water into a bowl, where you will soak the udon noodles in the water for about 10-15 minutes. Add the seasoning packets that come with the udon noodles into the chicken broth.

Step 3: Add the shredded chicken back into the broth. Also open the can of quail eggs and add to the chicken broth.

Step 4: Drain the water from the bowl with the udon noodles and coat with the tapioca starch. Spread the tapioca starch evenly and then add the coated udon noodles to the chicken broth.

Step 5: Let the soup come to a boil and now your ka pia is ready to be served. Garnish with cilantro, green onion, fried onion, the chili paste and Green Mountain Seasoning sauce.
