I grew up in the 50's when 'comfort food' was the call of the day. Food like meatloaf, mac & cheese, chicken and dumplings and green bean casserole were the norm. My folks owned a small neighborhood grocery store so access to meat and canned food was easy but fruit and vegetables, not so much. So once a week Mom and I would make the walk (she didn't drive) to the HyVee a block away. She was a good cook and managed to feed 5 kids on a minimal budget. Fried chicken (in Crisco), fried potatoes (in butter), Jello desserts, and Campbells mushroom soup on toast were some of the highlights. Ah...those were the days. What are your food memories? Have you tried this recipe yet? Refreshing and healthy! A great after-school treat.

PEANUT BUTTER CUP SMOOTHIE
INGREDIENTS
(1 serving - can be doubled)
1 cup of unsweetened
almond milk
1 frozen banana
1 scoop of chocolate protein
powder
1 Tbsp of peanut butter
NUTRITIONAL VALUE
(per serving)
Fat: 12 g
Carbs: 34 g
Protein: 30 g
Total Calories: 360
DIRECTIONS
1. Start by pouring the almond milk into the blender to avoid having
the ingredients stick at the bottom of the blender.
2. Next add in the banana, peanut butter and protein powder.
3. Turn the blender on, starting at a low speed and increase as
needed.
4. Once the liquid looks even, pour into a cup and enjoy
immediately to conserve as many nutrients as possible.

Can you beleve it's nearly the end of August? The kids are either in school or soon to be. I love this time of year. The weather begins to shift from sweltering to pleasant. Children and parents are crowding stores for school supplies and new shoes. It feels 'new' again. Kind of like when we turn over the calendar for a new year. Anyone else feel that way?

Did you know that today is Pi Day? According to Wikipedia, it: is an annual celebration of the mathematical constant π (pi). Pi Day is observed on March 14 (3/14 in the month/day format) since 3, 1, and 4 are the first three significant digits of π. It was founded in 1988 by Larry Shaw, an employee of the Exploratorium. Celebrations often involve eating pie or holding pi recitation competitions. I couldn't agree more! Make a pie, eat a pie, or enjoy the day of pi!

Edible Cookie Dough! Who doesn't LOVE eating raw cookie dough? This recipe is delicious, easy to make and will satisfy that craving!

1 cup chickpeas
1/4 cup cashew butter
1/4 cup chocolate chips (is there ever too many?)
2 tbsp maple syrup
1 tsp vanilla extract

Using a food processer combine all ingredients until smooth. Add in the chocolate chips and voila! Serve with apples, pears, or just a spoon!
