Our Charcuterie case is looking so lovely today. We had to share the goodie update. Pate en Croute, Country Pate, Hot Dogs, Andouille, Salami Cotto, Calabrese Salami Cotto, Bacon, Smoked Ham, Bologna, Moetadella!

And our fresh case has some great options too. Lots of great beef skewers, steaks, burgers. We have some lovely lamb racks, lamb chops, lamb Merguez, pork spareribs, chops, breakfast sausage.

Happy Wednesday! The case is full of fresh cuts of beef, pork, lamb, and chicken. We have restocked some of our favorite pantry staples from supertasterz™️ , and we also restocked on eggs from Across the Creek Farm. Our sandwich today and tomorrow will be an Italian grinder, and Friday we will have Lamb Kefta on flatbread. Open 12:30-6.

Our case is stacked this week! In our intro class we focused on whole lamb butchery and all of the great cuts, marinades, brines, and sausages that can come from that.

Plenty of dry aged beef steaks, grinds, and more along with pork and chicken. Our deli case is stocked up with all of your weekend needs.

We got lamb in this past week and the students rocked it out! We’ve got some lovely Hanna Family Ranch, LLC lamb in the case today. Rib chops, Harissa marinated chops, loin chops, marinated in Za’tar,spice, cross cut necks (manifesting cooler temps), kefta skewers (lamb sausage on a stick), Merguez sausage coming tomorrow and more! Getting this lamb is a special so step by!

We are also stocked up and lots of great beef cuts, chicken and pork.

The deli is ready for all of your it picnic, sandwich, or snack board needs.

Sandwich today and tomorrow is pastrami, rouille, Gruyère cheese, arugula, chicken m our Rosemary focaccia.

These lovely oxtails going into the case today. Oxtails are one of our favorite braising cuts. Braising season is getting so close, maybe cooler days to come, that we are ready now! Oxtails make great ragus, Louisiana style grillades, or a nice pasta filling. Top them over grits, polenta or tossed with pasta they make an amazing meal. Come try some!

We also have an amazing batch of bologna going into the case today. If you’ve never tried a house made bologna using pastured raised Berkshire pork the you’ve got to come get a taste.

Curried chicken salad sandwiches on our Rosemary focaccia in the store today. Our Reuben is on the menu for tomorrow.

Dylan has some lovely flatiron steaks ready for you! These are a very flavorful and tender cut from the chuck shoulder on the beef. Great flavor and great marbling!

We are stocked up on great pork, chicken, and beef cuts this week! Our deli case is slowly getting back to its full status. Mortadella back and Bologna will be in there tomorrow!

Happy Friday! We had a great 1st week back, and hope you did too. We have a meatball sub for our sandwich of the day. We have some really nice steaks, chicken, and pork in the case. The crew is still working on stocking back up, so the case is a little light. We also got some really great cheeses in. We’ll be here until 6:30.

New class in session! We’ve got that new student energy. We’re back open and working on our sandwiches, fresh cuts, and more charcuterie.

We’ve got fresh beef in the case, chicken, and some pork.

Sandwich today is our focaccia, smoked pastrami, slaw, Dijon mustard, and Gruyère cheese. So good. Come see us!

We are closed this week while we get ready for students coming back and we captured this great shot of our walk-in. We are ready for students!

Whole animal butchery is a lost craft and we strive to teach future generations what it’s like to butcher meat in this way. We feel it brings a deeper connection to the meat they are cooking and preparing. They understand which cuts are best for grilling, roasting, smoking, braising, and lots more. They learn about the skeletal and muscular systems, processing methods, different breeds of each species, dry aging, charcuterie, working with our local farmers, food safety procedures, and a respect for total utilization. We have a great time!

We will be back open next Wednesday the 19th.
