DID YOU KNOW? Root vegetables can actually get sweeter and more flavorful as the weather turns chilly!

Farmer Thad recommends eating carrots NOW, after the cold streak we’ve just had. The starches turn into sugars, making them sweeter.

And carrots aren’t the only cool-weather stars: Beets, Radishes- including daikon and winter radishes, Sweet potatoes, Turnips, Rutabagas, & Parsnips are all at their best.

What’s your favorite fall root vegetable?
