and ordering will close this week on Thursday morning or when sold out.

Hello Produce Friends!
I hope that this email finds you excited about Autumn and all the cozy things that go along with it. I have been enjoying making apple crisp and muffins, and working on canning projects that I was able to postpone because of wonderful freezer storage! It’s been great to put things away on the shelf and see all the beautiful jars that will make delicious meals throughout the winter months. BUT! I digress! I want to let you know that I have another order open right now. There are three types of apples; Ambrosia, Fuji, and Honeycrisp, these should fulfill all your canning needs! I’m excited about the juice and baking capabilities of the Ambrosia…I want to make some canned apple pie filling.
There are also onions, more pears, beets, and avocados. The avocados are a steal at just about one dollar each, and the case size is perfect to share with a friend who loves chips and guac as much as you do. If you’re a date lover, you don’t need to look farther than something you’ve probably never tried before… the Rhutab date. These are perfectly soft and chewy, just delicious and caramel enough to satisfy the sweetest of sweet lover.

Rhutab Dates

What is a Rhutab Medjool Date?
Dates grow in different stages. Right before the Rhutab stage is the the Khalal stage. This is where the fruit changes from green to yellow or red, that takes 3-5 weeks to complete (maximum weight and size); and can be boiled and consumed. Before transitioning into the Rhutab the moisture content in Khalal is anywhere from 45% - 65%.
In the Rhutab stage, the medjool date fruit changes from a yellow/red to a brown or black color. The tip of the organic date fruit starts to ripen. This stage lasts for about 2 - 4 weeks. The date fruit decreases in weight at this stage; it also becomes sweet. The moisture in this stage is usually 30% - 45%.
The Rhutab stage is only harvested and shipped in September. It is the second edible stage of medjool dates, at which the date fruit is delicate, translucent, moist, and very juicy with a luxurious, melt-in-you-mouth, texture.
I call this "Hues of Tomato Water." This is the tomato water left over from making Passata which is an uncooked tomato purée that has been strained of seeds and skins. It's a new to me project this year!

Ambrosia apples are a versatile variety. The apples have a sweet and aromatic flavor perfect for a multitude of uses. They are slow to brown, firm enough for baking, and always delicious.
Generally, high-acid apples like Granny Smith or Pink Lady are considered the ideal baking apples. Ambrosia apples are unusual in that they are low-acid, but still hold their shape when baked. This is due to their dense flesh. You can use Ambrosia apples in pies, cakes, and all sorts of baked goods.
If you enjoy making apple juice, be sure to stock up on Ambrosia apples when they’re in season. They’ll make a sweet and floral juice everyone will enjoy. Even better, the variety is naturally high-juice. While some varieties like Red Delicious give you just about as much apple pulp as apple juice, just two or three Ambrosia apples make a full glass of juice.
