701 BUTCHERY AND SMOKEHOUSE LLC — COMING SOON!!
My name is Ryan Henke. I was born and raised in Cole County, Missouri, and after spending the last 14 years working in butcher shops and kitchens across the country, I’m excited to bring everything I’ve learned back home.
701 Butchery & Smokehouse is being built on our family property in Osage County, Missouri, land my family has owned for more than 40 years. What started as family ground is now becoming a place where craftsmanship, food, and community can come together.
Along the way I’ve had the privilege of working under some incredible butchers and chefs, including time spent learning at Annie Gunn's and the Smokehouse Market in Chesterfield, Missouri. Those experiences helped shape how I approach butchery today, combining traditional craft, culinary knowledge, charcuterie, and food science into one discipline.
Using everything I’ve learned over the years, I’m designing the shop to be a modern, state-of-the-art butcher facility focused on efficiency and smart workflow. My hope is that thoughtful design and the right equipment will help reduce unnecessary hard labor on myself and future employees, allowing us to focus more on craftsmanship, quality, and consistency.
My goal with this shop is simple: continue the tradition of hardworking Missouri butcher shops while sharing some of the techniques, recipes, and ideas I’ve picked up along the way.
I also want this shop to be deeply connected to our local community. One small way I hope to do that is by supporting local high schools and events by donating house-made burgers, brats, hotdogs, and other treats whenever I can. Being plugged into the community and supporting it in any way possible means a lot to me and my family.
More than anything, my hope is that 701 Butchery & Smokehouse becomes a generational butcher shop, something that can serve families, farmers, hunters, and restaurants in this area for many years to come.
I’ll be bringing everyone along for the ride as the shop is built and eventually comes to life. From construction and equipment arriving… to the first animals processed and the first steaks cut in the shop.
I also want to take a moment to thank the people who have helped make this dream possible. A huge thank you to my Mom and Dad for providing the land and believing in this vision with me.
I’m incredibly grateful to the close friends, family, and a wife who have stuck with me, supported me, and believed in this dream along the way.
I’d also like to thank Mid America Bank and Matt Robertson for believing in this project and helping move it forward.
