Why Unwashed Eggs Are Better (The Science of the "Bloom")
If you are used to squeaky-clean grocery store cartons, farm-fresh unwashed eggs might look a little different. But that unwashed shell is actually nature’s ultimate preservation system.
Here is why unwashed eggs are fresher, safer, and better for you:
1. The Power of the "Bloom"
When a hen lays an egg, she coats it with a natural protective protein layer called the cuticle, or bloom. This dries into an airtight seal over the egg’s thousands of microscopic pores, blocking bacteria (like Salmonella) and air from getting inside.
2. Why Washing Changes Everything
Commercial USDA regulations require eggs to be washed in warm sanitizing solutions. While this cleans the outside, it strips away the bloom entirely, leaving the shell porous and vulnerable to outside bacteria. That is why grocery store eggs must be refrigerated immediately.
3. The Benefits of Keeping Them Unwashed
Shelf-Stable (No Fridge Needed): With the bloom intact, unwashed eggs can safely sit on your counter at room temperature for weeks.
Locked-In Moisture & Freshness: The bloom prevents the egg white from evaporating, keeping the egg fresher for much longer than commercial alternatives.
Better Taste & Nutrition: Local unwashed eggs go from coop to kitchen in days, resulting in those rich, nutrient-packed orange yolks.
The Golden Rule:
Never wash your eggs when you bring them home. Leave the bloom intact and store them in a basket on your counter. Simply rinse them under warm water right before you crack them open to cook!
