1st crawfish boil of the season happening this afternoon. Pics will be posted later.

Made big pot of gumbo. Chicken, andouille and smoked pork. Dark roux and all the veggies. Also threw in some grilled corn cut off the cob. Holy cow, this had to be my best batch. The flavor was awesome. And I really liked the addition of the fresh corn.

I would have added some photos, but we ate it all.

Are you potato salad “in” or “on the side”? I definitely like it in the bowl with the gumbo.

Oh man, dinner was awesome tonight. I started smoking the pork butt this morning before 5 AM. Total smoke time was 12 hours 40 minutes. Had make some coleslaw, collard greens and jalapeño cornbread to round it all out.
