Memorial Day weekend in the case.

A few things worth getting on the table:

Chef Cam's black truffle larded whole chicken is in, and there are only a few of them.

We’ve also got a fresh run of housemade heritage pork sausages:
🔥 Red Wine & Garlic - Toulouse-style, with cracked black pepper, red wine, and fresh garlic
🔥 Spanish Chorizo
🔥 Sweet Italian
🔥 Hot Italian

Also in the mix: all-beef Wagyu hot dogs and smoked jalapeño cheddar sausages.

And as always, the steak case is in good shape with a great selection of prime steaks from , all hormone free and antibiotic free.

If Memorial Day is getting sorted out now, come by the shop on Saturday and have a look. We're closed Sunday and Monday.

We put up a poll for Memorial Day weekend, you guys made the call, and we’ve been working on this one.

Our pastrami burnt ends piled generously onto a toasted bun with James River BBQ sauce.

Saturday only, so come early.

And yes, the first batch of is in the shop now from the same folks behind . Clean ingredients, specially formulated, and a good cold one to grab with it.

🌮 Cinco de Mayo falls on a Tuesday this year, so we had to make something special.

On Tuesday, May 5th, we’re making Quesabirria Tacos & Consommé! Slow-cooked beef, Oaxaca cheese, tortillas crisped on the griddle, and warm consommé for dipping. 😚🤌

It starts with toasted chiles, warm spices, garlic, onion, tomato, and enough time for everything to settle into something deep, savory, and just a little smoky. The beef gets tender without falling apart, the cheese melts into the edges, and the consommé brings it all back home with lime, salt, cilantro, and onion.

Messy in the right way. Rich without being heavy. The dip brings it home.

We’re making 50 servings only. No pre-orders - first come, first served.

Come hungry. Bring a friend. We’ll see you at the counter.

🌶️ The hot sauce on our shelf has a story.

When we first opened, Brian Trew didn’t walk in with a pitch. He came in, had lunch, left a few bottles behind, and Chef Cam tried them. And it's been a staple ever since.

What made it stick was the same thing that matters to us: local ingredients, people who actually care how something is made, and flavors with intention.

We put a short piece up on the site about Brian (who is a legend btw), how started, and which hoot sauce he’d pair with the pastrami, corned beef, and Boca Cuban.
