The Sage Beef process: Post 3

The life of a feeder calf begins around 6-7 months of age after being weaned from its mother. Generally, this process happens in the fall. In our program we have calves throughout the year in order to keep up with demand.

Once calves are weaned they’re moved either to their own pasture or in winter their own pen depending if there’s cover crops to graze or not. At weaning feeder calves weight 500-700 pounds! That’s almost halfway to finish weight!

Once this group is formed, these calves will spend the rest of their time with this same group of animals. Here they will begin to revive free choice hay, minerals, water and be started on our balance grain ration. This mix of ingredients ensures that the feeder calf has all the right nutrients infront of them 24/7 in order to be the healthiest and grow into our premium beef products.

Hi yall, Ian here! We want to apologize for the brief break in our regular posting and general content! I was away trying to figure out if my significant other would say yes or no too an engagement! 😅🎉 well she said yes!

Now that we have that mission accomplished, we will be back to our regular posting and content! The continuation of of the Sage Beef process series will continue, among other new things!

Keep an eye out on our online store front! We are going to be doing a little renovation in regards to product and prices, with more clarification this week and we think y’all will approve!

Looking for an easy delicious meal? Use our ground beef today!

Cheesy Potato Burritos
Ingredients:
1 pound ground beef (or substitute with ground turkey or plant-based alternative)
2 cups frozen tater tots
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
1/2 cup sour cream
1/4 cup Taco Bell chipotle sauce (adjust to taste)
6 large flour tortilla wraps
Salt and pepper to taste
Optional toppings: diced tomatoes, chopped green onions, cilantro
Instructions:
Cook the Tater Tots: Preheat the oven and cook the tater tots according to the package instructions until they are golden and crispy.
Cook the Ground Beef: In a skillet over medium heat, brown the ground beef. Season with salt and pepper to taste. Once fully cooked, drain any excess grease.
Assemble the Burrito Filling: In a large mixing bowl, combine the cooked ground beef, crispy tater tots (slightly crushed), shredded cheddar cheese, and shredded monterey jack cheese. Mix until well combined.
Warm the Tortillas: Warm the flour tortillas in a dry skillet or microwave for about 10-15 seconds to make them pliable.
Assemble the Burritos: Spoon a generous portion of the filling onto the center of each tortilla. Drizzle a spoonful of Taco Bell chipotle sauce over the filling. Add a dollop of sour cream.
Fold and Roll: Fold the sides of the tortilla over the filling and then fold the bottom up, rolling tightly to form a burrito.
Melt the Cheese: Place the burritos in a baking dish and sprinkle additional shredded cheese on top. Bake in the oven for a few minutes until the cheese is melted and bubbly.
Serve: Remove the burritos from the oven. Garnish with diced tomatoes, chopped green onions, and cilantro if desired. Serve hot with extra sour cream and chipotle sauce on the side.

**The Sage Beef Process: Post 2**

The life of a calf. We believe quality starts from day one when calves are born on our farm. Grazing season in New York is from May to November, so we focus on having most of our on-farm births in that time period. We believe calves born on pasture gain the highest quality start to life which sets the foundation for our high-quality finished beef products. Healthy calves ➡️ healthy feeders ➡️ healthy finishing cattle ➡️ healthy steaks!

What do calves do from birth to weaning?(about 6 months)

They spend all 6 months with their mothers, nursing milk to naturally grow a healthy bone and muscle structure. They also learn how to graze and where to find minerals and hay. At the same time, they socialize with the herd to establish their social order within the group - and cause mischief with their friends!

The skills a calf learns about adaptive grazing, where the free choice water, grass hay and minerals are, and social herd dynamics build the foundation for them to easily transition, stress-free, from stage to stage through our feeding program. Alternatively, if they become replacement heifers, these are skills they will pass on to their newborn calves one day!

We believe in the strength of building a strong, healthy herd, and that cycle begins with our calves.
