I tried every wrap we served at the Homesteading Conference on Saturday.

And there was one I would choose again, hands down:

Mortadella with mozzarella and roasted red peppers. Oh, my! So full of flavor.

It was such a beautiful day, full of amazing people, hands-on learning, and aspiring homesteaders telling us things like, “Reuben shares the real failures, successes, and practical decisions behind farming, so you leave knowing what actually works in real life.”

I didn’t expect lunch to give me this week’s recommendation for you.

But it did—and it reminded me that I’ve barely told you about one of the easiest ways to make a seriously good lunch at home.

Mortadella is a mild, savory Italian pork sausage that’s delicious sliced into a sandwich or wrap—so if you’ve been scrolling past it because you weren’t quite sure what to do with it, start there.

Like our other farm meats, it's made without the preservatives and fillers you're trying to avoid.

I wait for pepper season—when our own fields are full of glossy green, yellow, red, and even soft light-green peppers.

That’s when I bring this favorite dish back. We call it Pepper Steak. See below for more about this recipe.

I use thin slices of grass-fed sirloin tip steak and a pile of peppers from the farm. At first, they’re all green. But as the season progresses, I start mixing in the sweet, colored ones for both flavor and beauty.

Here’s my trick: Trim off every bit of the white inner membrane. That’s where the bitterness hides. Without it, the peppers taste clean, rich, and deeply satisfying.

And here’s a tip I learned the hard way: Peppers at the grocery store are often sprayed and coated with something called “Apeel”—a waxy preservative to extend shelf life. They’re also expensive and out of season most of the year. So if you love them, now’s the time to enjoy them fresh from the farm.

By the way, we never use "Apeel", "Organipeel" or "Glyphosate" - EVER!

I first made pepper steak when my oldest kids were still in booster seats and picky about almost everything—except this dish. It was quick, it was flavorful, and they would gobble it up without a fuss. I kept it in my regular rotation for years.

But over time, the ingredients I used began to change.

Back then, I followed a classic recipe that called for cornstarch to thicken the sauce and a bit more sugar than I’d use today.

Once I learned more about glyphosate contamination in corn products and how genetically modified corn is sprayed before harvest, I stopped buying regular cornstarch altogether. Now I skip it—or swap in something clean if I really want the texture, like organic arrowroot or tapioca starch.

Apple season is here — but it looks different this year.

The April freeze that damaged cherries, peaches, plums, and pears also affected apples, though not every variety was hit equally.

Some orchards still have apples. Some have fewer varieties. Some have lighter crops. And some are sourcing from partner farms to keep their farm stands supplied.

At Willow Haven Farm, we're working with our trusted sources — including Farm Fresh — to get apples for your bundles as they become available.

This is one of those years when supporting local farms means being flexible.
Maybe you don't get your favorite apple variety. Maybe the season is shorter. Maybe the apples cost a little more.

But every purchase matters — especially in a hard crop year.

When you visit a farm stand or farmers market this fall, ask the grower how their orchard is doing. Ask where the fruit is from. And buy what they have.

They're trying to stay afloat.

The best meals aren't the ones you spent hours making.

They're the ones made with a few truly excellent ingredients.

When the food is right, simple becomes special.

Keep high-quality proteins, cheeses, and basics on hand that you can pull straight from the fridge.

A charcuterie-style plate, a chunk of raw cheese with sourdough, leftover sausage with roasted vegetables — these aren't backup meals, they're good meals.

Light a candle. Sit at the table. Put your phone in the other room.

Let your kids choose what goes on their plate from what's available — it's not about perfection, it's about presence.

When the food tastes the way it's supposed to, your family will slow down.
