Whipping up some of our rolled beef! “Pastrami’s old Jewish cousin”- beef navel that’s brined for a week, slathered in molasses & spices, rolled, tied and roasted right here in the shop. If you haven’t tried it… it’s a run don’t walk situation…

The MOST special to warm up in this weather just hit the PBC freezers!!!

We teamed up with cookbook author and friend of the shop to celebrate her latest book- EVERYONE HOT POT! This gorgeous book (featuring stunning photos of PBC meat!) just dropped this week, make sure you grab your copy!

Our take on her “Tingly Beef Broth”, is made with our beef neck bones & tallow, packed to the brim with tingly Szechuan peppercorns and aromatics, and then slow simmered to perfection.
