We are heading to Texas to visit family before it’s time to harvest our garlic! ⭐️

I want to thank everyone who has shown interest in our farm journey this far. I love sharing a passion for local foods with this community 👩🏽‍🌾👩🏼‍🍳

We also have scape jam and pickled scapes up for grabs🫙

Scapes are great fried up with any meal - similar to green beans or asparagus! With a sweet garlicky flavor that can either be crunchy or tender.

They also serve as a great seasoning to your stir fry, crock pot meals, or ground up with some olive oil to make a fresh pesto 🌿

Many people compare the scape jam to hot pepper jelly, with a sweet start but a spicy kick 🌶️

After several weeks of bucketing water to our farm for irrigation, we were so grateful to be cutting garlic scapes in the pouring rain 🌧️

Garlic scapes are one of the many differences between hardneck and softneck garlic🧄

Hardneck garlic grows this curly flower stalk 🌀 called a scape, while softneck garlic does not. These scapes are removed so the plant sends more energy back into growing larger bulbs just a few weeks before the bulbs are ready for harvest. Larger bulbs means a higher quality product.

The best part? Garlic scapes are edible too — with a crisp and tender garlic flavor that’s perfect for pesto, grilling, soups, and stir fry. We even love eating them raw 🌱

It’s May and we are already preparing our beds for planting in November 🌱
Farming requires planning months ahead of schedule with constant trial and error👩🏼‍🌾

We will soon be harvesting close to 5,000 bulbs of garlic which we will keep, dry, and break open by hand in order to separate the cloves… this will multiply our crop by roughly six times the amount to give us nearly 30,000 cloves for planting late this fall 🧄

Creating these beds is essentially the only part of this whole process that can be done with a machine, the rest is all done by hand 👐🏼 With our no-till method, these beds will only be made one time and then recovered each year with compost to keep our soil as healthy and full of nutrients as possible.

I also want to add a great big THANK YOU to all of our friends who have shared their equipment to make our lives a million times easier. Starting a farm from ground zero means doing everything the hard way. What a relief it was to get these beds done in just a couple of hours 😊

Happy Earth Day 🌎.

Growth isn’t always about adding more—sometimes it means making space.

On our farm, that looks like planting garlic one clove at a time, pulling weeds by hand, doing the extra work to prioritize soil health, or removing old trees so new life can take root. 🌳

What’s broken down often makes way for what’s being built, and over many years of failure and perseverance, we are finally starting to see how our trials have led us to wisdom.

Small, intentional work with a purpose bigger than what is seen at first glance.
