A throwback since it is a Thursday. My family comes from a small island in Greece called Kea. They have been there for many hundreds of years. My grandfather, born in 1883 mind you, had a regenerative cattle grazing operation and vineyard on the island. The cattle and wine won him awards from the king of Greece at the time, old school ag expo. The pictures show small glimpses of agricultural island life taken at the turn of the 19th century. To carry on that tradition in a different part of the world has been the greatest accomplishment of my life.

We are now offering beef shares starting at $12/lb, from a 1/4 cow minimum to a half cow or more. We have a number of options from local grass finished to Wagyu, but always humane and pasture raised. FAT. Fat is not just delicious, fat is healthy. Fat is not the enemy, especially yellow fat: signature of grassfed beef. It’s a sign of nutrient density due to beta-carotene. Pasture raised, grass-finished beef has higher levels of omega-3s and CLA (Conjugated Linoleic Acid). Research suggests a direct positive correlation between pasture diversity and nutrient density in meat. Seafood Saturday is on thanks to ! We’ve got local line caught White Sea bass, halibut, lingcod, and rock sole. Also king salmon, scallops, prawns and Maine lobster tails. We also have pre-marinated fillets of fish, seasoned with fresh herbs, citrus and butter. Ready for the skillet, bbq or oven.

Product testing.... Its a tough job, but someone's got to do it, especially when it's tri-tip! And we have to say it was one of the best tri-tips we have EVER eaten.... Come by the shop today and nab one before they run out, at $15/lb these incredible tri-tips are a steal. We also have some incredible flanks steaks available, $15/lb. And our main man is making fresh to go with your steaks, chicken and/or seafood (we have some beautiful giant 🦐 available today for your surf and turf needs). AI and ultrasound technology are now being used to score live cattle for marbling and tenderness. The black angus in this picture is Grassfed from SLO. Ultrasound can show ribeye area (13”), intramuscular fat 10% and AI give the tenderness score of 25.53 (one of the most tender we’ve seen). Critical information for a buyer to know prior to harvest. This is how we get consistency in the steaks we market.
