Well folks, it’s the sad and bittersweet end of an era!!! Unfortunately, I’ve had to sell off my remaining hogs to auction due to the inability to get any more of my hogs processed at my former processor Triple C Meats. I’ve been in communication with them since last October and was only able to get 3 of my 25 hogs processed this past May. I communicated with them in the beginning of June again to see if I could get more animals in and they indicated that they were completely full from here on out. To those that have been waiting on one of our pasture/woodland raised whole or half hogs for sometime now, I’m sincerely sorry and wish I can keep this train rolling on a minimum scale but that certainly didn’t play out in the cards💯‼️ I was unable to continue feeding the hogs without a close to home butcher outlet. I’ve thoroughly enjoyed all of the years and have remained passionate about growing and bringing you the healthiest grassfed beef and pasture/woodland raised pork possible!! You are what you eat, and you are what your eats eat. Thank you 🙏 for a good run, much love to you all!!

There’s always a huge sigh of relief and a certain sense of accomplishment whenever you’re able to see this the morning after some of the most brutal and unforgiving weather this area has seen in a long time💯‼️ Feeding and breaking my ice becomes an additional rountine and daily chore. Unfortunately, I did lose an elder cow and a small calf last night...This weather is definitely no joke!!! No matter how many preparations you try and make, there never seems to be quite enough, and Mother Nature sometimes can be pretty cruel and relentless!!!

Side note: It’s definitely a plus to have a majority of black pigs in this weather because it helps warm them up whenever the sun ☀️ decides to come out.

In order to help ensure the continued health and safety of me, my family, and you, my customers, I feel extremely grateful to have been included in phase 1b of rollout (which includes agricultural & essential workers) and was able to have received the first of two shots of the Moderna COVID-19 vaccine today. Special thanks to the health professionals and volunteers at the Jackson County Health Department - Illinois, as everything ran very smoothly.

Homemade sauce is NO JOKE! We’ve got HOMEMADE LAZAGNA on FRIDAY! We’ll be offering a meat (locally-grown beef from Lick Creek Pork & Beef) or a Spinach/Mushroom (pictured here before the tomato sauce). Every special is served with a slice of garlic bread, as well. As always, we’ll have veggie burgers, burgers & grilled cheeses! And...(drum roll please) we actually have SOUP this Friday!! Mama’s Homemade French Onion will be available with housemade croutons! This article gives an accurate description of the current meat processing situation due to the COVID-19 pandemic. If you’re wondering why we’re currently out of some of your favorite products, processing dates has been the reason. Our processing dates will be back on track at Triple C Meats starting February 10th that will replenish a lot of items we are currently out of!! I’m sorry, but we don’t mass produce. When we run out of certain products, we’re out until we take more animals in to the processor.

It’s also been a wonderful to be able to work with a business such as Spanish Street Farmacy or Underground Public House who has the knowledge and capability to purchase and break down a whole hog into primal cuts, individual cuts, and also the ability to make value added or specialty products such as curing bacon, making head cheese, specialty products and the like. In today’s landscape, many of the local neighborhood butchers that made communities unique unfortunately are a thing of the past.
