Cheesy Tortellini in Red Sauce
Ingredients
* 1 (20 oz) package cheese tortellini
* 1 tablespoon olive oil
* 3 cloves garlic, minced
* 1 small onion, diced
* 1 pound ground Italian sausage or ground beef
* 1 (24 oz) jar marinara sauce or homemade
* 1 (14 oz) can diced tomatoes
* 1 teaspoon Italian seasoning
* ½ teaspoon salt
* ½ teaspoon black pepper
* 1 cup shredded mozzarella cheese
* ¼ cup grated parmesan cheese
* Fresh parsley or basil for garnish
Instructions
1. Cook the tortellini according to the package directions. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add onion and cook until softened. Stir in garlic and cook for 1 minute.
3. Add the sausage or ground beef and cook until browned. Drain excess grease if needed.
4. Stir in marinara sauce, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5–7 minutes.
5. Add the cooked tortellini to the sauce and gently stir to coat.
6. Sprinkle mozzarella and parmesan cheese over the top. Cover for a few minutes until the cheese is melted.
7. Garnish with parsley or basil and serve warm with garlic bread or a salad.
