So Siobhan told me someone is looking for the German Potato Salad Recipe.
LIEBCHEN'S GERMAN POTATO SALAD
Nice German potato salad served, cold, warm (room temperature, or hot)
3-5 Potatoes (red or white)
1/4 lb Bacon
3 Hard boiled Eggs
2 Gherkin Pickles (Large)
1 small Onion
2 Tbsp Chicken bouillon
1/4 cup Pickle Juice
1/4 cup Water
1 teaspoon Hacomat Seasoning *
Pepper
Vinegar
Essing of Vinegar
Vegetable Oil
• Boil potato, skin and put in refrigerator till cool (and/or 45 - 40 degrees) then slice into thin strips (I slice the potato in half-length wise then cut cross grain to makes nice little moons),
• Cut bacon into small cubes (I use a thick cut, then slice down the middle and chop into bits) cook then drain and set aside.
• Dice pickles finely (use a Cuisenaire if you can). I prefer Hengstenberg or Kuehne Pickles.
• Cut onion into thin strips. Use the same technique as potato slice in half thru the stem then cut cross grain for your thin strips.
• Slice eggs into circles
Dressing:
Equal proportions of water and pickle juice, add bouillon, bring to boil then add Hacomat and pepper. (will be awful, don't taste YUCK)
Combine potatoes, pickles, onion and eggs add dressing, few dashes of Essing vinegar, splash of Vinegar and splash of Oil. Mix gently and there you have it, German Potato salad.
*Substitute: Kirkland no salt seasoning, McCormick's Perfect Pinch Salt Free… or your choice of mixed seasoning
