As I was w**d wacking the lawn, the kids and I decided to make a lawn salad. All of this was hand plucked from the front yard of my home in California, Missouri, far enough from the road for me to feel comfortable with them eating it.
Creeping Charlie (Glechoma hederacea) Bold, minty, and slightly peppery with an earthy finish. High in Vitamin C and contains high levels of potassium and antioxidants (specifically rosmarinic acid, which is anti-inflammatory).
Spring Onion (Allium fistulosum) Pungent and crisp with a classic onion bite.
Common Chickw**d (Stellaria media) Fresh and light, very similar to a garden spinach or corn silk.It’s loaded with Vitamin C, Calcium, Magnesium, and Zinc.
Yellow Wood Sorrel (Oxalis stricta) Tart and bright, almost like a squeeze of fresh lemon juice. Incredibly high Vitamin C.
Henbit (Lamium amplexicaule) Mildly sweet and green, similar to kale but with a slightly peppery undertone. High in Vitamins A, C, and K. It’s also a great source of iron and fiber
White clover (Trifolium repens) Mild and sweet, reminiscent of young peas or raw green beans. High in protein (about 23-25%). It’s also rich in calcium and magnesium.
If I were to pick a larger quantity to make a real salad out of this, here's what I would do:
I would take the yellow wood sorrell (flowers and leaves) and blend them up a wee bit so they are a bit more liquid. This would be my " dressing"
The bulk would be my white clover flower head, henbit and chickw**d - flowers and leaves for all. It will be a gorgeous color too! To add some flavor, chop up the spring onion(including the white) and the flower and leaves of my creeping charlie. Drizzle that blended sorrel over it and
