Canned peaches and cinnamon rolls. I drained off 1 can of peaches. I placed 2 cans of peaches them in a sauce pan, added cinnamon, some brown sugar, vanilla extract. Brought the mixture to a soft simmer. Mixed some cornstarch with a little water to make a slurry. I added this to the peaches. Once thick I poured into a casserole dish. I used 2 cans of cinnamon rolls. I unrolled each cinnamon roll and placed across the top to form a lattice. Bake at 350 until the cinnamon rolls were done. The icing included with the cinnamon rolls was drizzled over the top.

Quick lunch for kids or those kid at heart. Unroll Crescent roll. Starting at the large end, place half a slice of cheese. Add hot dog. Roll towards the smaller end. Bake on cookie sheet at 350 until done.
This basic idea has lots of possibilities. Use sausage, lunch meat, any flavor of cheese. Use only cheese and add jalapeno peppers.

Cometa Squash was in the food share today. A favorite at my house is squash casserole.
Any type of squash will work for this dish.

Wash, peel and thinly slice the squash.
Thinly slice half of a onion.
Put squash and onions in a large pot. Cover with water and cook until tender. Drain.
Place the squash in a mixing bowl, add half a stick of butter. (Not margarine). Add shredded cheese. I've used cheddar, mozzarella and parmesan. Just use what you have. Add about 1/2 cup mayo (not miracle whip). I like to add diced bell pepper, but this is optional. Mix well. Pour into greased casserole dish. Top with more cheese and panko. Crushed up crackers will work as well. Bake at 350 for 20 mins.

White chocolate lime truffles. Several weeks ago white chocolate and milk chocolate chips were given. Either chocolate can be used for this recipe. This week a bag of limes were given.
The truffles make a great gift. They look very nice in a gift box.

Lime Truffles

2 cups chocolate chips
1/2 cup butter (margarine will NOT work)
1 big pinch of salt
4 TBSP Lime zest
6 TBSP heavy cream
2 tsp vanilla extract

Glaze: powder sugar, cream cheese, lime juice

Melt butter in small pan on the stove. Add the limes zest, salt and heavy cream. Stir well and bring to a soft boil. (Bubbles just starting)
Strain with fine mesh and pour over chocolate. (This step removes the zest) add vanilla. Stir until all chocolate is melted. Cover with plastic wrap and refrigerate for an hour.
Using a spoon or cookie scoop form chocolate into bite size balls. Place back in the refrigerator while making the glaze.

1/2 package of cream cheese. Microwave until nearly melted. Around 1 minute.
Stir until smooth. Add a TBSP of lime juice. Start adding some powder sugar a little at a time mixing well. Keep adding small amounts of juice and powder sugar until reaches a consistency you like.
Spoon glaze over truffles. I added Graham cracker crumbs for a key lime pie flavor.

What exactly is this odd looking vegetable and how do I cook it??
It's a Rutabaga!!. They are coated in wax so they don't dry out. The wax is supposed to be there. Peel the vegetable and then rinse under hot water to remove any wax residue. Nearly all dishes made with potatoes can be made with Rutabaga. Roasted, mashed, air fry etc. Let me know how you cooked yours.

Terms used on food packages can be confusing. "Best by" "Use by" etc do NOT mean the food is spoiled. Codes on packages is used for tracking purposes for potential recall of a product. The FDA only requires infant formula to have an expiration date.
Having the correct information about these terms could help avoid food being thrown away, when it's not neccessary. Always use your best judgment on whether a food is safe to consume.

Had the family over this morning for breakfast. I had a few cans of biscuits from the food share. Cut a hole in the middle and deep fried them. Dusted with powder sugar. Happy mothers day wkend.

Posey's Potato Supper

Wash, peel and cube up 5 or 6 potatoes. Add to cooking pot, add water to just cover the potatoes. Add salt and pepper to taste. Add butter to taste. The potatoes need to be cooked on a gentle simmer, so the potatoes keep their shape. In a small bowl mix 2 TBSP flour with hot water to make a slurry. Add the thickening mixture to the potatoes when the potatoes are fork tender. Bring to a soft boil. This is neccessary for the thickening mixture to work. Stir to keep from sticking. Once desired consistency is reached, add half and half or evaporate milk. Mix. Serve with cornbread and sliced onions.

A great idea for all the different flavor creamers that have been part of our weekly food shares.
Use the creamer as a substitute for milk in making pancakes, waffles and French toast.
