Zucchini Focaccia Bread
INGREDIENTS
• 4 cups all-purpose flour or bread flour
• 1 tsp salt
• 2 tsps active dry yeast
• 2 cups lukewarm water (100-115 degrees)
• butter for greasing
• 4 tbsp Drizzle’s Italian Herb olive oil, divided
• 1 cup shredded zucchini
• 1/2 cup shredded mozzarella cheese
• Optional, 1/2 teaspoon dried oregano or 1/2 teaspoon Italian seasoning. 2 tablespoons shredded zucchini, up to 1/4 cup shredded mozzarella
INSTRUCTIONS
• Bloom the yeast. Sprinkle the yeast over the lukewarm water. Allow to sit for 5-10 minutes until foamy. If the yeast doesn’t foam, throw it away and start over.
• Make the dough: In a large bowl, whisk together the flour, salt, zucchini and mozzarella. Add the yeast and water. Using a rubber spatula, mix until the liquid is absorbed and a sticky dough ball forms. Rub the surface of the dough lightly with olive oil. Cover the bowl with plastic wrap and let rise in a warm place for 1-2 hours. Be sure to cover so a crust doesn’t form on the dough. The dough should double and be jiggly with big bubbles
• Butter a 9×13-inch pan and line with parchment paper so the focaccia doesn’t stick to the pan. Pour 2 tablespoons of olive oil into the prepared pan.
• Gently deflate the dough by releasing it from the sides of the bowl and pulling it toward the center with a rubber spatula, turning the mass into a rough ball. Place the the dough ball into the pan and roll in the oil to coat it all over. Let the dough ball rest for 45-60 minutes, depending on the temperature of your kitchen (Do not cover for this rise).
• While the dough is rising, prepare your topping. I used 2 tbsp of zucchini and 1/4 cup mozzarella.
• Preheat oven to 425°F, near the end of the rise time. Pour 2 tablespoons of olive oil over the dough. Rub your hands lightly in the oil to coat, then, using all of your fingers, press straight down to create deep dimples. Gently stretch the dough as you dimple to allow the dough to fill the pan. Sprinkle your toppings on the dimpled focaccia and sprinkle with sea salt.
• Bake for 25-30 minutes until the underside is golden and crisp. It should pull away from the sides of the pan. Remove from the oven and transfer the focaccia to a cooling rack.
