Have you tried Winemaker's Select from Clover Creek Cheese Cellar?

Made in the style of Manchego using cow's milk, the curds are marinated in Cabernet Sauvignon from Grandview Vineyard in Mt Joy, PA. Aged 18 months, you may find the tasting notes similar to an aged asiago. The tangy scent indicates the flavors to follow. Expect a smooth yet crumbly texture, nutty undertones with fruity flavor from the wine and a zesty sharpness on your tongue. If you like strong, bold flavors, you definitely need to try this cheese!

This is a special cheese for the Rice family of cheesemakers at Clover Creek. David Rice was employed by the owners of Grandview at their veterinary practice, prior to starting the winery.

If you're in the Carlisle area, make sure you stop by the Midsommar Market of Magick! Not only will there be delicious cheeses there (you're welcome), you'll be entertained for hours by the creative and skilled vendors.

The first week of June will bring back two of your favorite events. If you're looking to take your cheese knowledge to the next level, check out the Cheese 101 Workshop.

Definitely stop in on Saturday, June 6th for our Cheese Olympics...and Customer Appreciation Day! We'll be celebrating our 3rd anniversary ( ) by thanking you with some cool door prizes, and bringing back the Cheese Olympics (a ticketed event).

The Habanero Blush Cheddar from Jubilee Heritage Cheese will take you on a delicious journey!

This batch is aged about 3 years, giving the cheddar a nice sharpness. With lingering heat from the habanero peppers and a touch of raspberry, your taste buds get a sweet, sharp, and spicy ride. And somehow through it all, those flavors are a backdrop to the sweet cream flavor of Jubilee Heritage cheddars.

I'd give it a 2/5 on the spicy scale. While it's the most mild of the spicy cheeses that we sell, it can take people by surprise. If you haven't tried it yet, stop in this week!

We've been selling cheeses out of a cooler from the 1900's for the past 3 years. Our Pennsylvania cheeses deserve better!

There's joy in the challenge of growing a business. If we're lucky, we get the opportunity to improve and make upgrades. This one makes it even more fun for us to sample cheese and for you to shop for it!

It's so beautiful that I could eat the whole wheel! This week's Cheesemonger's Choice is Thistle, from Valley Milkhouse.

Thistle is a creamy bloomy rind with a rich cream line made from cow's milk. The flavor delivers a soft briny, vegetal experience that gently transitions into a salted, buttered mushroom finish. The texture is divine.

The quiche flavor at The Cracked Pot Coffee Shop is cheeseburger. It's satisfying for breakfast or lunch, with a rich flavor from the browned ground beef, onions, and pizza cheese (made by ).

The quiche is available at the Cracked Pot in Mechanicsburg or Carlisle. The pizza cheese is available at our shop in Carlisle. Stop in for a sample!

I have been waiting impatiently for sheep milk season!

This week, we have our first batch of Sheep Bloomy on the way from The Farm at Doe Run.

Sheep are cantankerous creatures (IMHO) which makes it challenging to farm and milk them. This means that sheep milk cheeses are highly seasonal and it's the one thing I enjoy most about warmer weather - I can expect sheep milk cheeses to hit the cheese case!

Last year, this cheese had a beautiful vegetal flavor (like steamed cauliflower?), ultra smooth and creamy mouthfeel, and soft mushroom finish. I look forward to seeing what we get this year!

We're thinking about mozzarella tonight in the cheese shop!

Rynn Caputo from Caputo Brothers Creamery is spilling all the tips and tricks of 'pulling' fresh capomozz. If you've ever experienced eating fresh, warm mozzarella in Italy, this is the best option stateside.

CapoMozz from Caputo Brothers Creamery is the only cultured curd where the curd fermentation has been halted and frozen, which can be thawed and 'stretched' fresh. Why does this matter? Because the culturing and fermentation process makes the cheese taste better (yeehaw!) and easier to digest.

I wish each of you were here to taste how delicious it is! Buttery, squeaky yet pillowy in texture, and a satisfying salty yogurty tang on the finish.

It might be second winter outside right now but warmer weather is coming soon! This will be the perfect cheese to serve your friends. And that ain't stretchin' the truth!
