Scallions might not always get the spotlight, but around here, they’re one of those veggies we pretty much always have growing.
They’re fresh, crisp, a little sweet, and have just enough onion-y bite to make whatever you’re cooking a little more interesting. And the best part? You can use the whole thing.
Chop the green tops over eggs, tacos, baked potatoes, soups, salads, or sandwiches. Slice the white part into stir-fries, sauces, or salsa. Or toss the whole bunch on the grill or roast them for something a little different.
Basically, if you’re standing in the kitchen thinking, “Hmm… this needs something,” there’s a pretty good chance that something is scallions. 😄
We grow them year-round here at Farm on Central, so you can usually find a fresh bunch waiting in the farm store.
