Avocado pesto puts an extra silky twist on the classic pesto we all love! Toss it with pasta, spread it on sandwiches, or spoon it over grilled vegetables or chicken for an instant flavor boost. In a food processor blend together 1 cup of basil leaves, 1/4 cup toasted pine nuts, 2 cloves fresh garlic, juice and zest of 1 small lemon (about 2 tablespoons), 1 ripe avocado, 4 tablespoon olive oil, 1/4 teaspoon Kosher salt, 1/4 teaspoon pepper, 1/4 cup grated parmesan cheese until combined.
