Morel Mushroom Pasta with Creamy Morel Sauce 🍝🍄
A luxurious dish that celebrates the earthy, delicate flavor of morel mushrooms. Perfect for any pasta lover, here’s how to make it!
Ingredients:
• 1 oz dried morel mushrooms
• 2 shallots, finely chopped
• 2 tbsp butter
• 1 cup veal stock (or your preferred stock)
• 1/4 cup white wine
• 1 tbsp cognac
• 1/2 cup creme fraiche
• 8 oz fusilli pasta (or your favorite type)
Instructions:
1. Rinse the dried morels:
- Place the dried morel mushrooms in a colander or fine-mesh sieve. Rinse them under cold running water to remove any dirt, debris, or grit.
2. Soak the dried morels:
- After rinsing, place the dried morels in enough water to cover them (about 1-1.5 cups). Let them soak in the refrigerator overnight.
*Note: Be sure to save the soaking water for later—it’s packed with flavor and will be used in the sauce!
3. Sauté the soaked morels:
- In a pan, sauté the soaked morels (drained) with finely chopped shallots in butter until soft and aromatic, about 5-7 minutes.
4. Add stock & wine:
- Pour in 1 cup of veal stock (or your choice of stock), followed by 1/4 cup white wine and 1 tbsp cognac. Stir to combine.
5. Prepare the morel soaking water:
- In a separate pot, strain and reduce the soaking liquid from the dried morels (remove any sediment).
6. Make the sauce:
- Combine the reduced stock and soaking liquid, simmering gently below boiling point. Stir in 1/2 cup creme fraiche and cook until the sauce reaches your desired thickness.
7. Cook the pasta:
- Boil 8 oz of fusilli (or your preferred pasta) according to package directions.
8. Combine & serve:
- Toss the cooked pasta with the morel sauce, ensuring every bite is coated in creamy goodness.
