🍪COOKIE DOUGH BLIZZARDS 🍪⁠

Move over DQ! These thick and creamy Cookie Dough Blizzards are a must-make this summer 🍪🌪️ They're made with better-for-you ingredients and are completely vegan and gluten-free— a win-win! 🙌 And guess what? Ingredients:⁠
1 13.5-ounce can Let’s Do Organic® Organic Heavy Coconut Cream⁠
⅓ cup organic granulated sugar or maple syrup⁠
1 tbsp Let’s Do Organic® Organic Arrowroot Starch⁠
1 tbsp vanilla extract⁠
Optional: ½ tsp vanilla bean paste or powder⁠
2 batches edible vegan gluten free cookie dough ⁠
½ cup additional vegan chocolate chips⁠

Directions:⁠
Chill your ice cream container overnight.⁠
In a medium saucepan, whisk together coconut cream, sugar, arrowroot starch, vanilla extract, and vanilla bean paste. Then bring the mixture to a boil on medium-high heat. Once boiling, reduce heat to low, and continue to whisk until mixture just begins to thicken. Once thickening, remove from heat. Allow the coconut custard to cool entirely before using in your ice cream machine. This will take a minimum of 4 hours in the fridge.⁠
Once your ice cream is cool, you can begin to churn the ice cream. Pour your custard into your ice cream machine per the instructions of the maker. Churn ice cream according to the maker’s instructions. We recommend at least 30 mins until it really begins to thicken.⁠
While the ice cream is churning, make the edible cookie dough according to instructions.⁠
Once the ice cream has thickened, scoop the cookie dough into teaspoon-sized globs, and stir into the churned ice cream, along with chocolate chips.⁠
Spoon cookie dough blizzard into serving glasses, and top with additional cookie dough pieces. Serve & enjoy!⁠

☘️ Ingredients ☘️
2 cans Let’s Do Organic Sweetened Condensed Coconut Milk (14oz total)
3 and ¾ cups white chocolate chips
1–2 tablespoon matcha powder
2 tsp vanilla extract
¼ tsp salt

☘️ Instructions ☘️
Line a square baking dish with parchment paper, leaving some paper hanging over the edges. This will prevent the fudge from sticking to the pan.
In a large bowl, add the white chocolate chips. Shake the cans of sweetened condensed coconut milk. Pour coconut milk over the white chocolate chips. Microwave it for 90 seconds. Add matcha powder, vanilla extract, and salt. Whisk together to evenly combine the ingredients.
Pour the matcha fudge into the baking dish. Spread evenly across the bottom of the dish. If desired, decorate with toppings.
Chill fudge in the freezer for 2 hours or until firm. Lift parchment paper out of the pan to easily remove the fudge. Allow it to thaw for a few minutes before slicing into 16 bars. Enjoy!

Ingredients:⁠
Cookie Crust:⁠
1/2 cup vegan butter, cubed⁠
1/4 cup sugar⁠
1 tsp vanilla extract⁠
1/4 tsp salt⁠
1 cup all purpose flour or gluten-free all-purpose flour⁠

Peanut Caramel Filling:⁠
2 cans Let's Do Organic® Caramel Sweetened Condensed Coconut Milk⁠
2/3 cup sugar⁠
1/2 cup vegan butter⁠
1 and 1/2 tbsp cornstarch⁠
2 tsp vanilla extract⁠
1/4 tsp salt⁠
1 cup chopped roasted unsalted peanuts⁠

Chocolate Topping:⁠
1 1/2 cups chocolate chips⁠
1 1/2 tbsp coconut oil⁠
Instructions:⁠

Preheat the oven to 350°F and line an 8×8 inch baking dish with parchment paper.⁠
In a large bowl, mix vegan butter, sugar, vanilla extract, and salt until creamy. Add flour and stir until combined (it will be dry and crumbly).⁠
Transfer the dough to the baking dish, press it down, and bake for 15-20 minutes until edges are golden brown. Let it cool completely.⁠
In a small pot, combine caramel sweetened condensed coconut milk, sugar, and vegan butter. Heat on medium-low, stirring until butter melts. Add cornstarch and cook for about 10 minutes until caramel thickens. Remove from heat, add peanuts, vanilla extract, and salt. Stir.⁠
Pour the caramel over the baked crust. Chill in the refrigerator for 1 hour.⁠
In a microwave-safe bowl, melt chocolate chips and coconut oil. Spread over the caramel layer. Chill in the freezer for 30 minutes.⁠

Made with Let’s Do Organic Heavy Coconut Cream 🥥 by our friend Britt of ✨

Ingredients
1/2 cup (113 g) vegan butter or coconut oil, melted
6 ounces vegan white chocolate chips
1/3 cup (80 mL) aquafaba or soy milk, room temperature
1 1/4 cup (250 g) granulated sugar
2 tbsp ground flaxseed
1/4 cup (60 mL) Let’s Do Organic Heavy Coconut Cream
1/4 cup (60 mL) lemon juice
Zest from 3 lemons
1 tsp vanilla extract
1/2 tsp lemon extract
2 cups (250 g) all-purpose flour or gluten free 1:1 baking flour
1 tbsp organic Let’s Do Organic Cornstarch
1/4 tsp sea salt
Optional: additional 1/2 cup vegan white chocolate chips

Lemon Cream Cheese Frosting:
1/2 cup (113 g) vegan cream cheese
1 cup (140 g) sifted powdered sugar
1 tsp lemon extract
1 tsp vanilla extract

Instructions:
Preheat oven to 350F, and line an 8×8 or 9×9 baking pan with parchment paper. Make the flaxseed “egg” by whisking the ground flaxseed, coconut cream, and lemon juice in a small bowl. Set aside.
Heat vegan butter until hot in the microwave, then stir in the vegan white chocolate chips until they melt. Set aside.
In a large bowl, rub the sugar and lemon zest together to release the lemon oils. Add in aquafaba, flaxseed mixture, vanilla extract, & lemon extract. Whisk or use a hand mixer until the granulated sugar has dissolved into liquid. Then add in white chocolate mixture, & whisk just until combined.
Add in flour, cornstarch, & sea salt, & fold dry ingredients into brownie batter just until mixed. Then fold an 1/2 cup of vegan white chocolate chips in if desired.
Pour batter into prepared baking pan & bake. For a 9×9 pan, 30-32 mins, for an 8×8 pan, 35-37 mins.
Allow brownies to cool in the pan for 30 mins.
When the brownies are fully cool, you can frost!

✨Vegan Air Fryer French Toast Sticks ✨ ⁠

Looking for a Veganuary recipe to whip on the weekend? 🌱These better-for-you Vegan French Toast Sticks are the perfect brunch recipe and oh so easy to make in the air fryer 😋⁠

Grab the recipe below 👇Made with Let’s Do Organic Cornstarch by 🤩 ⁠

Makes: Recipe makes for about 15 sticks of toast.⁠

Ingredients⁣:⁠
1 cup dairy free milk⁣⁠
1 tbsp ground flax⁣ seeds⁠
1 tbsp Let’s Do Organic Cornstarch⁠
1 tbsp coconut sugar⁣⁠
1 tbsp nutritional yeast⁠
1 tsp vanilla⁣⁠
1 tsp cinnamon⁣⁠
dash of nutmeg⁠
dash of salt⁣⁠
about 5 slices of stale bread⁣⁠

Directions:⁠
Start by slicing the edges off some stale bread and then cutting it into strips.⁠
Combine all of the ingredients in a medium sized bowl. Combine the milk, flax, cornstarch, sugar, nutritional yeast, vanilla, cinnamon, nutmeg, and salt. Mix them well.⁠
Dip each stick of bread into the mixture for a few seconds, making sure both sides are covered in the mixture.⁠
Line your air fryer with parchment paper and spray the parchment paper with coconut oil. Place the French toast sticks on top.⁠
Place them in your preheated to 350*F air fryer for 8 minutes. At 8 minutes, take them out, flip them, and air fry for another 2 minutes. Note: This was the cooking time that worked best for me based on the size of my French toast sticks and the type of bread I used. Your cook time might be different.⁠
Once one side of the French toast sticks has become golden brown in color and are slightly crispy to the touch, they’re ready to be flipped. Once the other side feels and looks the same, that side is ready too and the toasts is ready!⁠
Stack your French toast sticks on a plate with some fruit, dust powdered sugar on top and dip in maple syrup.

DAIRY FREE PEACHE ICE CREAM 🍑 This delicious homemade ice cream is made with Let’s Do Organic Sweetened Condensed Coconut Milk and Native Forest Organic Peach Slices by .fit.peach Get the recipe below 😋 ⁠ ⁠

Ingredients⁠
1 can Let’s Do Organic Sweetened Condensed Coconut Milk⁠
1 can Native Forest Simple Coconut Milk⁠
1 tsp vanilla⁠
1/4 cup coconut sugar⁠
2 cans Native Forest Organic Peaches, drained⁠
crushed ice cream cone (optional, to top)⁠

Instructions⁠
In a blender, mix together the coconut milks, vanilla, coconut sugar, and 1 can of peaches; set aside⁠
Chop the other can of peaches into chunks⁠
Pour the coconut mixture into a pot with the chunks of peaches and heat over medium-low; let simmer for 2 – 3 minutes⁠
Transfer the mixture to an ice cream container and let it set in the freezer for at least 8 hours until soft and cream

Calling all peanut butter lovers! It's and we'll be munching on these No-Bake Peanut Butter Cookies 🥜 🍪 Get this easy recipe below made with Let's Do Organic Coconut Flour by ⁠With an added chocolate option too, because who doesn't love chocolate and pb 🤤

Ingredients⁠
1 cup peanut butter (or almond butter for a paleo version)⁠
1/3 cup maple syrup⁠
1 teaspoon vanilla extract⁠
1/2 teaspoon sea salt for unsalted peanut butter, about 1/4 teaspoon sea salt for salted peanut butter⁠
4 tablespoons Let’s Do Organic Coconut Flour⠀⁠


Instructions⁠
Mix everything together in a large bowl until well combined. Set aside for about 5 minutes so the coconut flour can absorb any remaining moisture in the dough.⁠
If, after 5 minutes the dough still seems too sticky, add a little more coconut flour, about 1 teaspoon at a time. It is super absorbent, so don’t overdo it.⁠
Once dough is the consistency of a thick cookie dough, roll into 1 inch size balls. Gently press to shape and flatten with your fingers and then make criss cross marks with the tongs of a fork.⁠
Chill in the refrigerator for at least 30 minutes. If you want to take the cookies to the next level you can dip and drizzle them with your favorite melted chocolate! If adding chocolate move back to the refrigerator so they can set before digging in.⁠
A sprinkle of flaky sea salt to finish them off never hurt anything, either 😉.
