One year ago this week, we opened the doors to Wedgewood Cheese Bar.

What followed has been one of the most joyful, challenging, surreal, exhausting, rewarding, and community-filled years of our lives.

Over the last year we’ve poured thousands of glasses of wine, cut more cheese than we can possibly quantify, hosted 50+ dinners, classes, events and tastings, and even more first dates, birthday celebrations, reunions, and random Wednesday nights that somehow turned into unforgettable evenings.

And somewhere along the way, this little cheese bar became a real part of people’s lives — which is something we never take for granted.

We’ve never really been the “buy a ticket to our anniversary party” type, so instead we wanted to spend the week giving a little something back to all of you for choosing Wedgewood this past year.

After months of planning, research, tasting, and storytelling, Eat the World is officially returning to Wedgewood in August with twelve new destinations spanning coastal villages, alpine taverns, bustling markets, wine-country kitchens, and some of the most compelling regional food cultures in the world.

What began as a small series has quietly become one of our favorite things we do at Wedgewood — a way to explore food, wine, cheese, and regional traditions through the lens of place.

This season, we’ll travel from the Adriatic coastlines of Croatia to the taverns of Bavaria, the kitchens of Bologna, the markets of Oaxaca, the vineyards of Burgundy, the wilds of Patagonia, and beyond.

You don’t need a flight to Paris for Bordier Butter. Just good timing.

Because butter is back.

Our pre-order is live with Bordier salted & unsalted bars, cut-to-order mottes, and a full lineup of flavors—yuzu, seaweed, Roscoff onion, smoked salt, and more.

We’ve also put together a few gift boxes and a short list of butter-friendly wines to go with it.

Most of this is available by pre-order only—we’ll have a small amount in the shop, but it tends to go quickly.

Butter is not a trend. I said it. It’s an incredibly versatile, centuries-old ingredient driven by ingenuity, terroir, history, commerce, and highly skilled craftspeople, mainly women who sought opportunities for economic independence and contribution to their communities, from 17th century milkmaids to contemporary Amish Country. The opportunity to sit down and talk to about BUTTER for was a treat. She came to Wedgewood on a Saturday afternoon, just a couple of days after we received our monthly Bordier shipment— nearly 50 # fresh from the Brittany coast in seven varieties, from Roscoff onion to seaweed to Espelette chili. We sampled 10 butters, all of them cultured and salted, including far-flung dairy darlings from Normandy, Brittany, and Parma, as well as up and comers from Vermont and Wisconsin. We talked about why cultured butter tastes so damn good (the clue is in the question), how and when to use it— at room temp, in cooking, and right off the spoon. The best part about butter having its moment is that it’s more accessible than ever before. So skip the flight to Paris and head to Carrboro (or your local cheese shop) for the good stuff. No sticks, no sweet cream, just the golden, creamy French stuff 🧈 Delighted to see it’s finally getting the credit that it’s due in the U.S.

We’ve made a small shift to our weekly rhythm at Wedgewood.

Sundays are now the home for private events, special programming, and Eat the World—our ongoing series of immersive, place-driven food and wine experiences.

Over the past few months, we’ve seen growing demand for gatherings that feel a little more transportive—afternoons and evenings built around a region, a table, a point of view. Carving out Sundays gives us the space to do that more intentionally.

From walkaround tastings and wine dinners to full buyouts and celebrations, Sundays at Wedgewood will look a little different each week—but always centered around good food, good wine, and a strong sense of place.

We’ll no longer offer lunch service from 11am to 3pm but you can find us in full swing the rest of the week (Wed through Sat) for everything you know and love at our cheese counter, wine shop and bar.

But Sundays? We’re going somewhere.

We’re the only shop within hundreds of miles of the Triangle where you can get Bordier cultured butter. Hand-churned and shaped with wooden paddles on the coast of Brittany, it’s cultured for 72 hours, which brings an unrivaled punch of flavor especially when warmed or used for cooking. In fact, when you heat it or finish a warm dish with Bordier, the cultures unlock bright aromatics that mimic citrus and herbs.

She is the gold standard of French butter and is used by chefs, kitchens and home cooks around the world. Bordier is pre-ordered a month in advance and arrives almost simultaneously in the best kitchens in Paris, New York, London, Chicago and more.
