Traditional Hawaiian Limu Poke

Ingredients:

• 1 pound fresh ahi tuna, cut into 1/2-inch cubes
• 1 cup brown Hawaiian Kahuku Ogo (limu), thoroughly washed and chopped
• 1/4 cup soy sauce (shoyu)
• 1 teaspoon sesame oil
• 1/2 teaspoon crushed red chili flakes (optional)
• 2 green onions, thinly sliced
• 1/2 cup diced sweet yellow onion
• 1 teaspoon grated fresh ginger
• Sea salt to taste
• 1 tablespoon toasted sesame seeds

Instructions:

1. In a large mixing bowl, combine the cubed ahi tuna with the soy sauce, sesame oil, red chili flakes, green onions, yellow onion, and grated ginger.
2. Gently fold in the washed and chopped Kahuku Ogo seaweed.
3. Season with sea salt to taste and mix well to ensure all the ingredients are evenly distributed.
4. Cover and refrigerate the poke for at least 30 minutes to allow the flavors to blend.
5. Serve chilled, garnished with toasted sesame seeds.

RECIPE: Vietnamese Heart of Palm Salad (Gỏi Tâm Vỹ)

Ingredients:

• 200g fresh heart of palm, thinly sliced
• 1 carrot, julienned
• 1 cucumber, julienned
• 1/2 cup fresh mint leaves
• 1/2 cup fresh cilantro leaves
• 1/4 cup roasted peanuts, crushed
• 1/4 cup fried shallots
• 2 tablespoons sesame seeds
• 2 tablespoons fish sauce
• 1 tablespoon rice vinegar
• 1 tablespoon lime juice
• 1 tablespoon sugar
• 2 cloves garlic, minced
• 1 red chili, finely sliced
• Salt and pepper to taste

Instructions:

1. In a bowl, whisk together fish sauce, rice vinegar, lime juice, sugar, garlic, and chili to create the dressing. Adjust the flavors to your liking.
2. In a large mixing bowl, combine the heart of palm, carrot, cucumber, mint, and cilantro.
3. Pour the dressing over the salad and toss gently to coat everything evenly.
4. Let the salad sit for 10 minutes to marinate and absorb the flavors.
5. Transfer to a serving plate, then garnish with roasted peanuts, fried shallots, and sesame seeds.
6. Serve as a refreshing side dish or light main course.

Heart of Palm Salad with Avocado and Cherry Tomatoes

Ingredients:

• 1 cup fresh heart of palm, sliced into rounds
• 1 ripe avocado, diced
• 1 cup cherry tomatoes, halved
• 2 tablespoons fresh cilantro, chopped
• Juice of 1 lime
• 2 tablespoons extra virgin olive oil
• Salt and pepper to taste
• Mixed greens for serving

Instructions:

1. In a mixing bowl, gently combine the sliced heart of palm, diced avocado, and halved cherry tomatoes.
2. Add the fresh cilantro to the bowl.
3. In a small separate bowl, whisk together the lime juice, olive oil, salt, and pepper.
4. Pour the dressing over the heart of palm mixture and toss gently to coat.
5. Serve the salad over a bed of mixed greens.
