About our new Freeze Dried Mushrooms
Many of you know that this past year we started transitioning from the industry standard of dehydrating wild mushrooms to freeze drying them.
Freeze drying protects most of the original flavor, size, texture and nutritional value of most foods. Freeze dried mushrooms rehydrate quickly, just 2-3 minutes to prep them for saute' and never leave you with woody stems or smaller than expected mushroom servings. You can put them directly in soups or sauces to cook and plump without first rehydrating. And if you are someone who likes to have a storage pantry built up, the shelf life is an incredible 25 years unopened. There truly is no comparison to dehydrated mushrooms.
We've been building up mushroom varieties this past year and are excited to share our journey of transitioning to freeze dried wild mushrooms.
This is truly a step up for mushroom and gourmet lovers. Enjoy fresh and flavorful mushrooms straight from nature even after their local season has passed and elevate your culinary creations any time of year.
And, speaking of Morels ... our local season of fresh morels is just around the corner!! Fairly certain to have fresh by 2nd Saturday in April.

Important Information for those we haven't seen in a while . . .
Just so everyone is "in the know" here is a recap. Bill & I stopped doing farmers markets a few years ago (except for special events like the Hood River Harvest Market) in order to focus on building our own little store in Carson WA in the Gorge and serving our established business outlets in the Portland area.
After 3 years of working the wild food farm store several days a week, we determined that it was not financially sustainable to continue that effort. BUT, we also wanted to be able to serve our die-hard wild food "foodies." So, the store is now officially only open once a month for "2nd Saturdays."
In addition to 2nd Saturdays in Carson, we welcome anyone from Portland & beyond to make arrangements to pick up goodies directly from our home in Vancouver WA on weekends. All you need to do is call or email Laura to make arrangements so we can make sure to have what you're looking to pick up. Laura's number is 360-624-1537 and email is [email protected].
We also have a limited variety of products at The Providore Fine Foods, People's Co-op and Growers Market in Portland.
