is scientifically and individually hand-selected from among the highest quality pasture raised, corn-finished American cattle available from our exclusive producers. WestRidge Ultra-Premium Beef contain no antibiotics, no added hormones, and no animal byproducts. Our beef is optimally aged, hand cut and trimmed, then flash-frozen in state-of-the-art packaging for delivery direct to your home. Expertly Selected

Creating WestRidge Ultra Premium Beef is a highly selective process that begins on the farms of our known, trusted cattle ranchers. Our expert buyers use their knowledge and proven judgment to individually select each animal on the hoof from among the highest quality animals available. We only choose animals that will yield upper-tier Choice to Prime beef. Our buyers’ judgments are confirmed by our butchers during processing. This high standard is achieved by only 15-25% of typical high-quality cattle, including purebred Angus and crossbred cattle. Beef that doesn’t meet these criteria are not accepted for WestRidge Ultra Premium Beef. No Antibiotics

Animals selected for WestRidge Beef receive only humane-use antibiotics. This means that if an animal develops a bacterial infection, it is treated with antibiotics under a veterinarian’s supervision, and only long enough to cure the infection. All our animals must be antibiotic-free for at least 60 days before slaughter. Antibiotics are never used prophylactically or in order to increase the rate of weight gain, as is common in the crowded, unsanitary, stressful conditions of large commercial feedlots. The use of low dosages of antibiotics is a significant contributor to the emergence of multiply drug-resistant strains of bacteria, which present a major health challenge that is reaching crisis proportions throughout the world today. Such abuses of antibiotics are in direct conflict with the principles of sustainability and we reject them. No Added Hormones

WestRidge Beef contains no synthetic or added hormones. Large commercial feedlots routinely place implants under the animal’s skin containing large doses of synthetic sex and growth hormones – dosing steers with synthetic female hormones and heifers with synthetic male hormones. These exogenous hormones persist in the animal’s tissues, and are present in the meat sold in most online and retail stores. Scientific research suggests that when these hormones are consumed by humans, they can affect growth and development in our children, and may have unknown and negative effects in adults. This is why WestRidge Beef will never contain any added hormones. No Animal By-Products

The cattle we select for WestRidge Beef are never fed animal by-products, plastics or other unnatural ingredients. Commercial feedlots feed an astonishing array of byproducts – processed blood, entrails, feathers, hair, skin, hooves, plastic pellets . . . even processed manure. These feeding practices are legal under USDA regulations and meat from such animals is considered safe. However, we believe they are neither sustainable nor healthful. We believe that it is important for our customers to know where their beef comes from. WestRidge Beef implements record-keeping systems to enable true “Farm-to-Fork” tracking of every cut of meat we offer. We call it Source Verification. Our producers certify the origin of each animal they supply to us, their veterinarian-supervised practices and record-keeping, and that their animals are free from antibiotics and added hormones. Our identification and tracking processes enable us to trace every cut of WestRidge Beef uniquely to the individual animal it came from and the producer who raised the animal. Humane Practices

Animal Husbandry
We believe that humane animal husbandry is an intrinsic element of sustainable agriculture. For this reason, we only work with producers who we know and trust, and who raise their cattle using documented humane practices, such as access to pasture and stress minimizing handling methods. Handling and Transportation
To insure that every animal is handled humanely, with a minimum of stress and distress, we use our own vehicles to transport the cattle selected for WestRidge Beef to our exclusive processors. By controlling the transportation process, we can be sure of humane handling practices. Our transporters and beef processors strictly adhere to humane handling slaughter practices at their plants, such as those investigated and developed by Dr. Temple Grandin and her associates. It is well-documented that humanely treated cattle yield higher quality meat. USDA Inspected

Our processors are USDA-inspected and certified. A USDA inspector is present during the slaughter and butchering process and monitors the work of our butchers. All processing and carcass preparation procedures must meet the stringent USDA requirements. We process our animals individually by hand, and in small daily batches, in contrast to the mechanized “disassembly” methods used in large commercial slaughterhouses. This allows our butchers to use their expertise and skill to optimally prepare the carcasses for aging. Dry-Aged 21 Days

We dry-age WestRidge Ultra Premium Beef for at least 21 days for maximum flavor and tenderness. Dry-aging is the traditional European and most costly method of aging beef, but it yields the highest quality and most flavorful beef. Perfectly Cut – Ultra Premium to You! After dry aging is complete, our butchers expertly hand cut and trim WestRidge Beef to maximize the quality, texture, and tenderness of each cut. Each finished cut is quickly vacuum-packaged, hand-weighed and labeled, then flash-frozen to seal in its full juicy flavor, tenderness, and healthful nutrients at the peak of perfection – ready for your kitchen or grill.
