Onion Seder Roast
Ingredients: 3-4 lb second-cut brisket,
3 large red onion, sliced into half moon rings
3 large, white onions, sliced into half moon ring
6 garlic cloves,
1 cup red wine
1 Cherry tomatoes
Sicilian olive oil,
salt, and pepper.
* Preparation: Rub the brisket with salt and pepper
* Heat a large Dutch oven or sauté pan add olive oil and sear the meat for a few minutes on each side on high till you get both sides golden brown.
* Remove meat from pan and set aside
* Add onions and sauté on low for 45 minutes until they are very soft
* Add in garlic, tomatoes, and wine
* Add the meat back in cover and cook on low covered for 4 hours
* Remove the meat
* Turn up the heat of the pan and reduce down the liquid to intensify the flavors for about 10 minutes do this while stirring continuously and smash with a fork, the garlic and the tomatoes incorporating them into the sauce.
* In meanwhile, slice the meat then return to the pan with the reduced onions and sauce
* Tips: Using a second-cut brisket provides extra fat for better flavor and tenderness when braising.

Looking for some delicious meats to make for your Purim Seuda
has the perfect ribs recipe to share

Saucey Flanken Rib
8 flanken strips
3 Tablespoons brown sugar
2 Tablespoons cumin
1 Tablespoon garlic powder
1 teaspoon paprika
1½ teaspoons cinnamon
1 teaspoon rosemary
½ teaspoon salt
½ teaspoon black pepper
Sauce
2 cups barbecue sauce
1 cup red dry wine
2 tablespoons soy Sauce

1. Place meat into a large roasting pan; set aside. Heat a broiler or grill pan. You can also sear on a out door grill.
2. Prepare the spice rub: In a small bowl, combine brown sugar, cumin, garlic powder, paprika, cinnamon, rosemary, salt, and pepper. Rub over all surfaces of the flanken.
3. Broil or grill flanken on high for 2-3 minutes per side; set aside.
4. Preheat the oven to 325°F.
5. Prepare the sauce: Whisk together barbecue sauce and wine until smooth. Pour sauce over broiled flanken.
6. Cover pan tightly; bake for 3 hours.
7. Ingredients
Cook’s Tip: • Don’t skip the broiling stage; it really boosts the flavor!
• Double the spice rub and keep it in an airtight container in the freezer. You’ll find yourself making this recipe over and over!

Pastrami Chicken Roll-Ups with Peppers

Ingredients:
• Thin chicken cutlets (white meat)
• Sliced pastrami
• 1 can sautéed onions (or sauté 1 onion yourself)
• 1 red pepper, sautéed for 20 minutes on medium-low
• ¼ cup maple syrup
• Chili powder
• Garlic powder

Directions:
1. Lay out the chicken cutlets and season with garlic powder & chili powder.
2. Layer with pastrami, sautéed onions, and red pepper.
3. Roll up each cutlet and place in a baking dish.
4. Brush with maple syrup and sprinkle with a little extra chili powder.
5. Bake uncovered at 350°F for 20 minutes.
