Peige Feng, founder of 格式料理Gestalt Cuisine in Taiwan,
has spent years pursuing the point where deep knowledge disappears into instinct — where technique dissolves into flavour, where a dish stops being made and starts being felt.

In this exclusive session, he brings that pursuit to waterless cooking — built on three principles:
